    My favorite restaurant stopped serving collard greens recently so I’ve been searching for an IP recipe whose ingredients list makes sense to my mental palate. Yours is right on. I can tell the pot liquor you create is well-balanced with flavors versus some recipes that clearly will be much too sweet or much too tangy. This is the recipe I will make tomorrow and adapt to my tastes if needed. Great job and thank you for the hard work it takes to produce these videos.

    I wish I had found your video. I have been making collards like this on the stove for years, but it took me forever to figure out how to adapt it to the Instant Pot!! You would have saved me a lot headaches and a lot of burn messages!!

    Thank you so much for this wonderful recipe! I used a smoked turkey leg instead of the hock, red pepper flakes because I didn't have a jalapeno, and I only had a pound of "ready to cook" greens. Oh my! It truly was the best bowl of greens that I have ever had!

      I used smoked turkey wings and I also like smoked turkey legs too. I also make a pepper sauce and I don’t use sugar in my greens. I got to have cornbread as well.

    Very good video. I especially like how you pay special attention to the details. It especially helps seeing exactly how much the collards shrink down. I will make my fresh green beans the exact same way. Between collards and green beans, both with ham or bacon or ham hocks or smoked turkey, I could live on just this for the rest of my life!     I've been looking for vegetable recipes for my new "CrockPot Multi-Cooker". This recipe is first on my list to try. Glad I watched your video first before I messed up the dish. I thought the hock would have to cook first, before the greens.

      I love greens and pork and turkey tails, but most of all I love the stargate episode playing in the background or stargate generally.... so I’m going to buy an Insta cook and make greens and watch stargate

    What you did with the flavorful parts of the ham hock was a sin against flavor, but I totally get it.... lol. Otherwise, you made a beautiful pot of greens,... hats off to you for a lovely job. Well done!

    Great I like to cook mine for 25-30 minutes. If I use ham hock or smoke turkey. I might cook them separately for 30 minutes rinse it off and then put it in with my collars for another 25-30 minutes!

    Excellent video with overhead filming & clear concise instructions & visual. I will have to see if have that Adobo seasoning. I am wondering if it would still be good if I don't. Going to check out your other videos. :-)

      Adobo is a Latin seasoning and can be found in many grocery stores including Walmart. It's a really tasty season all.
      A description from the web; Adobo seasoning is a mixture of garlic and other spices that is often used to season meats, beans, soups, and other dishes in Latin American, Caribbean, and Filipino cuisines. In my kitchen, it is a general all-purpose seasoning that I add to meats, soups, seafood, eggs, roasted vegetables, and many other dishes.

    Save the stems and other discarded greens to make vegetable stock. You can freeze them.

    Just like I would make them. My only difference is I add hot sauce instead of jalapeños and chopped cooked bacon in the end. Bon appetit!

      They are pre-cooked smoked ham hocks that you buy at the grocery store. When you cook them with the greens they get to fall apart tender.

    Takes a good frost on collard greens before you cut them out the garden. Takes out some of the bitterness.

    Good info but I skip a lot of your steps. I don't find collards bitter at all. I never soak them for all that time and never add sugar. Other than that, I appreciate the info and also the fact that you didn't feel the need to chatter at us as if we wanted entertainment!

    Made this and found it a bit salty for my taste. I don't know if it's the salt water for soaking (rinsed it twice after soaking) or the country ham pieces I used. I'll have to find a way of cutting down the salt next time.

      Country ham is very salty. That would be the reason. My dad loves country ham but I can't eat it because it is like a salt lick to me.

      Absolutely Amazing and Easy To Make Instant Pot Collard Greens!
      2-1/2 cups chicken broth
      1 Tbsp white sugar
      1-1/2 Tsp minced garlic
      1-1/2 Tsp Adobo seasoning
      1 Tbsp bacon grease
      1 jalapeno pepper sliced including seeds (removes seeds and membrane for less heat
      1/2 Tsp black pepper
      1 Medium onion chopped med
      1 smoked ham hocks
      1-1/2 Tsp apple cider vinegar (correction, my notes say 1-1/2 Tbsp not Tsp)
      2 bunches of collard greens about 4lb before removing stems
      Remove the stem from the leaves by cutting a couple of inches after the leaf starts on the stem and discard the lower leafless stem. Cut the leaves into 2 inch pieces and soak in clean salt water for an hour to clean them (I used my freshly cleaned sink). Once the water has a green hue to it, lift the leaves out carefully not to disturb any dirt/sand that has fallen to the bottom of the water. Place them in a colander to drain, and set aside.
      Set the Instant Pot to sauté, melt the bacon fat, and cook the onions until translucent and have browned/caramelized a little. Now add the chicken broth, sliced jalapeno, black pepper, Adobo seasoning, minced garlic, white sugar, apple cider vinegar, and stir to mix.
      You will have a huge pile of greens so you may need to wilt them down using the sauté mode to get them all in. Just add as much collard greens as you can to the Instant Pot, close the lid with the vent OPEN and let it cook for about 5 to 10 minutes so the collard greens wilt down, then add more collard green pressing them down. Repeat this process until you have all the collard greens in the Instant Pot. Now add the smoked ham hock to the bottom of the pot under the greens and process on high for 1 hour. These greens are very tender so if you prefer a little more chew to your greens then process for 45 min. I found it easier to wilt the greens without the ham hocks (more room).
      Once the 1 hour is up do a quick release and open the lid, remove the smoked ham hocks, remove the meat from the bones and return the meat to the pot discarding the bones. Stir and eat!

    Cutting them that way takes way too long. I fold the leaf in half at the stem cut with kitchen scissors and it’s so much easier!

      It's easy, don't be scared. There are so many UA-cam videos; just type in Instant Pot beginner and all kinds of recipes pop up. You can't get hurt; there are safety features built in. You can not open the lid until all the pressure/steam is vented out. The pot won't let you take the lid off of it if there's still steam in the pot!

      No problem. This is just the way I like them and to me the pot liquor is the best! You can use less chicken broth and only cook for 35 to 45 min depending on how al dente that you like them. Thanks for commenting.
