225g Softened Unsalted Butter
125g Caster Sugar
1 tsp Salt
340g Plain Flour
For the Caramel
1 can Condensed Milk (397g)
25g Caster Sugar
75g Golden Syrup (or corn syrup)
120g Butter

OH.MY.GOODNESS!!!! I made 2 pans of these today. I will admit that whisking each batch of caramel for about 25 minutes each was wicked because of arthritis. But...was worth every swish!! Came out looking exactly like your photos!!! I'm overwhelmed.
EDIT..Is very dangerous now because I just learned how INCREDIBLY EASY it is to make shortbread! YIKES!!
Made these this weekend and my son has just had one. His reaction “oh my god mum these are the best things I’ve tasted in like ages”

When making the caramel mine turned out really watery don’t be alarmed this is normal after 20mins of constantly stirring it will turn out thicker and more caramelised

Did you use golden syrup or corn syrup? Mine wasn't as caramelized and I used corn syrup.

@@koalanoodle689 Millionaire's shortbread is shortbread plus caramel plus chocolate in cool layers and it is expensive to make. Twix has all the same stuff but in a different order and it's cheap and easy to get a hold of.

I like the idea of burnt butter . I would probably make it like a smoked burnt butter lavender shortbread with salted caramel and a caramelised ruby chocolate top.

The name "millionaire's shortbread" appears to have originated in Scotland. The "millionaire" prefix to millionaire's shortbread or millionaires slice implies a level of decadence and wealth to the sweet treat, that it is an upgrade from regular shortbread.

From my research, I think that it is called a ‘millionare’s’ shortbread because of how rich it is!
It’s a traditional Scottish biscuit, and yes, it was named after milionaire’s for its richness AND to kind of elevate it as a luxury saved for special occasions. Scotland was once very poor, especially after the failed Darien Scheme which ultimately led to the Act of the Union (1707) and the birth of what we now know as the UK, and looking at photos of the Glasgow slums that existed right up until WW2 and lesser so until 1960, coupled with how life and the world changed during the industrial revolution and days of the Empire, according to literature and accounts of the times.
Sorry, I’m just stoned and Scottish and full of lots of such information. 🤷♂️🤣

I've been making caramel squares (that's what we call them here in Northern Ireland) for around 7 years now, and as much as people love them, I gotta admit that Sally's look amazing! That caramel looks to die for! I for sure have to try this recipe out when I get back to work. They look so tasty!

I had a recipe years ago that I loved and couldn’t find.
Did a reputable recipe over the weekend which was horrid.
Searched and came up with yours.
I did 1 1/2 times the recipe for a 9 x 13.
Everything else is the same.
I live in Ohio in the US. I happen to still have some golden syrup from a visit to family in London. Will have to get more because I can’t imagine not using golden syrup.

I love to make this as you don't get it where I live. I tried the condensed milk caramel and is too sweet for me, I actually changed it to Jemma's caramel recipe, I let it get a little darker which complements the sweet chocolate 😊💕 So delicious!!!

I made the shortbread according to this recipe 4 times now and every time it came out fantastic. Finally made the full millionaires shortbread recipe and it turned out mind-blowingly good. It is incredibly rich but worth every bite. Thank you for the tips and recipes! Made in Arizona USA.. just a little too for to travel to try yours.

You have never lived until you’ve ate one! They do amazing ones at costa coffee’s, definitely would recommend it :)
Took me a few attempts with the caramel, but if I start the timer at 20 minutes as I light the gas under the pan, then stir on a low rolling boil, take off at exactly 20 mins, It's absoloutlky perfect!!

I made these today without the caramel part. Its delicious!
I made these and had some issues, however the end result was still delicious. I followed the recipe exactly and found my shortbread was too crumbly. I also cooked my caramel 20 minutes, trying for the same color as shown, but at 20 mins the color wasn't as burnished and it was much thicker than the consistency seen in the video, so my caramel layer was much too chewy (and yes, I used Golden Syrup - it's a staple in my Irish hubby's pantry). Next time, because we will baking these again, I'll focus on the consistency shown in the video for the shortbread and caramel vs the exact measurements and/or timing. Also, the shortbread recipe is the closest to Walkers Shortbread I've found, and I've tried a lot. Excellent overall. Thank you for sharing this! It's a new family favorite.
My gran used to make this in the 1970s and called it Mars Bar Cookie ☺️
