How to Make Millionaire's Shortbread | It's Super Rich!

  • I was inspired to make this shortbread after seeing it posted on Instagram by my most prolific baking buddy Lan. If you have spent some time in my UA-cam comments section or on our Flickr group, you’d know her pretty well. She’s living proof that all my recipes work.
    But she bakes much more than just my breads and cakes and that is where this shortbread comes in. I’ve had millionaire’s shortbread before, but I had never made it though. Caramel is something I love a lot, so finally I decided that it was time to try and make it, and while I’m at it make a video about it too.
    There are a couple good lessons in this recipe - the shortbread base and the caramel. Each can be used for many applications, so they’re great skills to learn. Both can be a challenging if you don’t know what you’re doing, but I’m sure that after watching this video you will be able to make them.

    Thank you, Charlie, for making this recipe extra special as a "two-fer": A delicious sweet bake and baking/cooking technique skills that can be used for other projects (how to make a shortbread base, how to make a caramel layer, how to use double boiler to melt chocolate).
    "Sharing bakes" actually does make me even happier than enjoying my bakes, as you and everyone in "Charlie's Baking Buddies" are aware.

    So sweet. The best shortbread cookies I have eperienced are: One - Martha Stewart's Rosemary shortbread cookies and Two - Little Maddie's Lemon Shortbread Cookies. So Good.

    Made these today - sampling the trimmings as I "comment". It's too warm in my kitchen to cut them all this evening, so back in the fridge they go until tomorrow morning (hot day plus I was baking other treats) - slightly melty chocolate, soft and creamy caramel and the wonderful crumbly shortbread with the sea salt finish - OUTSTANDING!!!
    Photos have been posted (sort of, there appears to be a limit of 2 posts a day now on Charlie's Baking Buddies - my numerous posts about my many, many bakes are probably the reason for that 😆) #241 - only 59 to go!!! 😉 Many thanks for sharing your version of this lovely sweet treat! 🤩🤩

    Like many of your confection creations, this looks like a million bucks! I have a theory that twix candy is basically a mass-market version of this!

    One of my faves, will give this version a try. Previously used 50:50 with dark sugar in the caramel layer, as well as some salt flakes for a salted caramel taste👍

    I knew the recipe would be good when Charlie added salt on top. Made this and it was easily the best caramel slice I've ever had. Not sure if it makes a difference, but I also briefly baked the caramel layer as this is how I've seen it done in other recipes. In any case it turned out elite 👌

    Made this in a 20cm x 20cm and the proportions were fine (in case you haven’t got the pan in the video). Cut them into 2cm squares and that’s the perfect morsel for these incredibly rich treats. Perfect for an apocalypse, one tray must be 5000 calories.

    I remember these from my time overseas. They were called caramel slice? Buttery and sugary. In fact way too sweet, these made me feel physically sick after eating just one it had that much sugar in it 😂. Very Tasty but not for the older me today. Nice recipe.
    I redesign sweet pie recipes here because again way too much sugar. I have seen two or more cups of sugar called for in some of the recipes. My conversions try to get down to 1/4 cup sugar in the whole pie if I can get it that low. Otherwise 1/2 cup is fine but I don’t want any more in my pies.

    Looks awesome! But I don't really eat sugar anymore... I'll stick to yeast breads. Made pan de cristal today to take to friends with covid. I hope they can taste it!

    I'm currently trying this out ^^
    Just put it in the fridge to cool down.
    Hope my first try for caramel works out, it did taste good but I think I did not make it right.
    I think I was to afraid of heating it at the beginning and turned the heat down to early and then it took so long and did not get the right thicknes? then I've increased the heat etc. took me probably 30 minutes, taste wise very good but it might have a 'crystaline' structure. As long as it is not to liquide or hard, should still taste good.

      It should not matter how long it takes to cook as long as you get it to the right colour and thickness

      @@ChainBaker so I'm done with the chocolate as well, the 'caramel' is more like those milk caramel and is a touch to fluid. Color is ok so. It probably will be tricky when I cut it. Decided to do that tomorrow (it's past 10 pm here ;) ).
      Taste wise it fill be good, I'm sure of it and I'll definitly try that again.

    Thanks! Please make Panettone. Every time I watch someone on UA-cam try to cut corners in the process, the Panettone come out more dense.

      If you take a look at his "Breads of Christmas" playlist, there are two Panettone recipes - there is also a Pandoro recipe. The Panettone and Pandoro recipes from Dec 2022 were outstanding - I baked them a few times and shared as holiday gifts with family, friends and neighbors.

      I do have a panettone recipe, but it is definitely denser than it should be. Perhaps I'll update it this Christmas :)

    Looks great! And I think your explanation is excellent.
    Have you ever made a pavlowa? I've once found a great explained recipe from Marion Grasby (Marion's kitchen).
    While the fruits are getting ripe on our side of the globe right now, it should make a great topic.

      Not yet. I try to make all my recipes by hand. Whipping meringue would be torture 😂 But I may dust off my mixer one day and give it a go! Cheers :)

    Nice! I was missing your videos. Now I have a new recipe to try! I´ll use honey, though, because we don't have golden syrup here. There´s something tjat I think is similar, a sort of corn syrup, but I don't like it very much, so honey will be.

    Is the Carmel layer slightly chewy .. I love chewy ... Meaning some Millionaire short bread the caramel is more like fudge... I'm not keen on that... Just wondering? 🎉

    This looks awesome! I was about to bake this but I have a question. So here in the US we have "Condensed Milk" (which has tons of added sugar) and "Evaporated Milk" (which has no added sugar). I assume that given the caramel ingredients list sugar that I should be using "Evaporated Milk" (with the sugar as listed), not "Condensed Milk" skipping the sugar if it's the same amount of added sugar)?

      Oh you definitely need the tons of sugar condensed milk for this recipe! 😄 Evaporated milk would make the caramel too runny.

    One question, what is the best way to store this? Fridge or better not to cool (for the shortbread?)

      I would store it in the fridge and let it come up to room temperature before serving.

    If the salt were sprinkled on before completely cooling, would it stick to the surface better?

      It attracts moisture and kind of ruins the surface.

      I sprinkled my salt on while the chocolate was still warm and haven't had any trouble with excess moisture in the last 24 hours. ymmv

    In my household these are called 'mice-cake' as sometimes pieces will disappear from the fridge overnight. Why? Must have been mice.

      Sandwiching a couple of cookies together. Decorating something. Chilling, cutting into pieces, and coating in chocolate. Perhaps even warm drizzled over some ice cream.

      Swirled into or on top of cheesecake. Boil the caramel to the hard ball stage and you'll have tablet. Mix with whipped cream for meringue filling. Or, there's the classic Banoffee pie. 🙂

    If you added salted peanuts into the caramel I'll bet it would taste like a Snickers bar, although, I think they use nougat under the caramel. Maybe a hybrid Twix bar and Snickers bar. Looks tasty.
