Server OS always make these type changes more challenging. Here is some 3rd party tools : www.diskpart.com/articles/convert-raid-to-gpt-4348.html or www.hdd-tool.com/disk-converter/convert-mbr-to-gpt-windows-server-2016.html (step 3 on this site might work)

I've got a 2850 and I've put in all six SCSI drives, but only a maximum of four of them are showing up in the RAID GUI, how can I troubleshoot this?

i want to know, what's the steps to rebuild types of RAID
will perc let you set the RAID as JOBD
how did you get in to the controller
1 logical drive found on the host adaptor
1 logical drive failed
1 logical drive handled by Bios.
Do you have a video for fixing this?

Create RAID1/RAID5 redundant VD, deploy OS on RAID VD.

Yes you can but the primary OS should be not on that drive.
