      @@hellfish2309 that's a different thing and calling it not better or equal to the first one is different. I think the only problem with the second one is the cavier which do have a very distinct taste.

      I honestly think it would have been better with something other than the caviar on top, it needed a bitter note of some kind I think to balance out the rest of the flavors we're seeing there.

      @@timnewton1073 But if he didn't add the caviar he couldn't clickbait "$450 breakfast sandwich" and would have to admit that his idea for the expensive breakfast sandwich is only like $40. Which is doubly ironic because he specifically said he wasn't just going to just add caviar and call it good.
      And yes, I know he also used pork secreto which is expensive, but he fried it meaning a pork chop would be just as good in the recipe. Just like how you don't get points for gold leaf in these kind of videos, using an expensive ingredient that doesn't add anything gives you no points.

    Tbh, I think the caviar is what pushed the 450$ sandwich over the edge. Before that the foam and scrambled eggs would act as sauces for a chicken fried pork sandwich, which sounds amazing

      Yeah I wish “expensive meal” videos would stop using caviar, it’s an overrated ingredient that mostly exists to inflate the price. I’m sure there are people who like it, but even they use it as a tiny embellishment on most dishes. Self proclaimed expensive dishes often dump a bucketload of caviar and gold leaf and other useless ingredients just to raise the ticket price.

      @@ckannan90 I don't get that either. Caviar is insanely good and in small quantities really compliments the dish but it's definitely a bit of an acquired taste, like olives or blue cheese.

      It's more accurate to say that most people have never developed the palate to appreciate caviar because they've only tried it once or twice, or never in their life because it's too expensive. Even very rich people aren't going to pay a lot of money for something that tastes bad, so it must be delicious to anyone who's used to it.

      @@MrJruhl1 Yes, that's my thought exactly. Make the expensive version with mid-grade ingredients. Instead of making a gruyere foam, try a good smoked gouda mornay, or something to that effect. Instead of chicken-fried Iberico jowl, just use some regular thick-cut bacon that's been chicken-fried. Instead of adding caviar-caviar, try some pickled/soaked mustard seed with classic egg seasonings. The soft scramble is a necessity, in my mind.

      I caught that too.
      My wife is very particular about her bread staying crispy and not getting soggy, when I do any cooking that requires toasting/frying bread.
      I usually use a wire rack to achieve the effect, but this would definitely work too.

    The caviar seemed to be an afterthought IMO. While every other ingredient is just an elevated ingredient common in a breakfast sandwich, I've never heard of fish roe being common on a breakfast sandwich.

    7:30 I absolutely agree Joshua. The cheaper sandwich simply has the best and original flavors while the expensive sandwich has some weird flavor combinations like the caviar and foam which (in my opinion) don’t really go well in a sandwich

    Yeah, the expensive one is just too rich. Heart attack in sandwich form. Some fresh avocado or greens or something to offset the fried fats I think would be a good thing.

    Thank you for actually cooking both sandwiches. The small one is me all day times probably four. I love those with fresh ryebread toasted. Your extra special sandwich, I have to admit other than the caviar and the creamed eggs, that's money. I don't eat caviar and I like the standard folded omelet on my sandwich (like your first sandwich) but wow, when you toasted that special bread in the pan full of butter I pretty much died. That kind of premium bread pan toasted in butter is a pure delight and making anything with it, makes it on a complete other level. Great video. That fried pork fillet looking incredible. damn, I'm hungry....lol

    I know toasting your bread is super important and a key step in a lot of good sandwiches, but for the $450 one I would have kept it untoasted considering you already have two crispy/crunchy textures in the pork and bacon. Especially considering the choice of sourdough, and it having a firmer texture already vs other choices.

      My thoughts exactly. Sourdough turns very dry and into a sharp blade when toasted; just heating it on a butter-free pan is the best way to prepare it for a sandwich 🤤 I think the expensive sandwich would have been very delicious with non-dry bread and without caviar, as it doesn’t make sense

      Honestly, maybe just a simpler version would be better. Don't fry the pork, pan fry it and wrap it in the best omelette you can, a little cheese on each side, and slap that in between two pieces of good toast, best possible mayo optional.

      No way. I may the be odd one out here, but I preferred the $450 one. I've had the other one and variations of it too many times and wouldn't think much of it even though it's tasty. I'd want something different and complex with delicious components like the $450 one.

    Soft-scramble eggs always look so vile to me. The cheaper breakfast sandwich, even with the mayo, looks so much better than the expensive one.

    Hey I love your videos! Been watching for a while now. Im going to have to go back into the office so my days of making fresh meals whenever I feel like it are coming to an end. I would love it if you could make a series with frozen meals, like frozen breakfast sandwiches I could just nuke or make ahead things like frozen croissants that I can take out of the freezer, proof and then bake: minimal involvement make ahead things, maybe you can call the series "But Faster" or something.

    I could see doing the bougie soft scrambled eggs and upgrading the bread somewhat to make a better sandwich that does not have to be the $400 one. I have yet to try the soft-scramble technique, but I am very intrigued!!

    The expensive one didn't even look good to me. The chicken fried pork looked good, but everything else not so much.

    I always make the second sandwich on the weekends! Except that I can't afford beef so I replace it with a fried breaded tomato slice... caviar is a no go - instead I suck on a piece of frozen salmon skin in-between bites. The second one is great! 👌😘

      Caviar is one of those pointless things people do....the only reason people eat it is to say they've ate it. For me it just acts as an indicator of your genuine iQ level 😂

    So I've heard you shouldn't salt your eggs before cooking but I've also heard that it is fine too. Is it a matter of preference or does it actually affect the eggs in some way?

      It really depends on the kind of curds you’re trying to form in the cook: if you’re making omelette scramble like in Josh’s first sandwich it won’t really matter when you salt unless you’re adding a lot; if you’re making that custardy european scramble like in Josh’s second sandwich then you want the salt after so that the proteins don’t wrench out water (notice he doesn’t salt this one until after the cook is done and cooled off with creme fraiche)

      Depending on the quality of your eggs, they may turn a bit more pale or even greyish. If you salt the eggs more then 10 minutes before, it also might affect the way the curds form. Adam Ragusea had a video about that. It will still taste delicious though.

      His exact preparation? About $70-$80. A more sensible recipe that's the same idea (so not deep frying an expensive cut that's meant to be eaten raw cured or rare/medium rare at the most) and you get it down to about $40. You could get it under $15 if you also just used normal bacon, but I'll let him have that one because it's not clearly dumb like the secreto is. Also a lot less if you make the portion more reasonably sized. He kind of hand waved away the portion size discrepancy, and while it is true that it'd be a lot more at equivalent portion sizes, the expensive sandwich is ~50% bigger than it has any right to be which makes it significantly more.
      fwiw I'm also not convinced that the sandwich is actually more than $200 even as prepared. The numbers don't add up. Secreto is $40 a lb. The bacon is apparently $25. Grueyere is like $5. I don't have a good intuition for how much caviar 4 ounces of caviar is, but it has to be in that ballpark for it to actually be over $400.

    i think the ideal breakfast sandwich cost is probably $10-$14. it gives enough room for quality bread, bacon, and cheese. hopefully the eggs and veggies are locally sourced too, as in a farmers market.

    I mean, I've always somehow find out that the more simple the dish the tastier it always is, you don't need to put fancy or expesive ingrediants in the dish, the important part is to make you feel good, because that's what food is all about ^^
