I used to be a supervisor at A&W. Believe me, we did everything we physically could to try and make the food decent... but during Covid, upper management made massive price cuts. I'm talking labour percentage of 11-14% and our manager getting written up and screamed at on the phone if it went higher. Any restaurant owner worth their salt will tell you that this is COMPLETELY INSANE. Everyone quit in April, starting with our manager, and including myself, because we were being pushed to work unpaid overtime just in order to keep things up to standard. I was a supervisor and I didn't want anyone getting food poisoning, so I was going in unpaid after hours (in exchange for food that my manager slipped me) trying to clean the place up because having one cook and one cashier on a Friday night means that nobody has time to clean. And my manager came in, unpaid, on CHRISTMAS DAY to clean because that was the only day of the year where there weren't any customers. One day my manager finally went rogue and authorized for a bunch of us to stay late and get paid to deep clean the place (because the HEALTH BOARD told her to), and head office screamed at her over the phone. I heard it. She told them that she needed more labour to get the place up to health board standards, and they punished her for it by cutting our hours even more. After that we all coordinated finding other jobs, and one by one, all quit over the course of a month.
If you ever go to an A&W during rush hour and you only see two people working, or if the line is around the building... go somewhere else. If you must go there, try to keep your focus on the popular, standard items that sell quickly, and you'll be more likely to get it fresh. And please... go easy on those kids. They're trying their best out there.
I know this video was about BK and not A&W but... I just had to get that out there.
Working in the horeca sector is a stressful job.
I loved to cook and from the age of 16 I was working in restaurants.
By the age of 22, i fell out of love with cooking.
It's a tough job and it'll break you literally and figuratively.
That's why when I order something and it takes long, I always go back to the times I worked in a kitchen in my mind and calmly wait for my order to be ready.
Capitalism bay bee.
More people in the world need to hear this story and others like them. It sucked that you had to go through that but I'm glad you're all out. Fuck em. I love A&W but i'll make sure to avoid it as much as possible. 👊
@@Everything4Tech Something I forgot to mention was that this is A&W Canada - other countries are entirely separate legal entities. With any luck, if you're in a different country, you MIGHT be okay. When you go to a place, scope out how many people are working and how clean it is. If it looks filthy in there, ESPECIALLY if there's only one cook and only one cashier (or if the cashier is alone and running into the back to help the cook), it's a red flag.
@@MedorraBlue "Look at the restaurant, and if it's FILTHY, don't eat there."
I'll keep that in mind.
The nodule things you saw on one side of the burger is from the cooking. It's cooked on a flame "char broiler" conveyor belt thing. Those are the juices that kind of congeal and break away from the main burger. You get them on your own burgers if you dont flip them. The act of flipping them gets them off your burger.
the amount of work put in that burger was mind blowing but does look like the best burger ive ever seen.
I’m 50 years old so I remember when Burger King opened up in St.Louis MO. The Whopper burger was a bit smaller than a dinner plate and each burger was flame grilled to order, there was actual smoke in the air because they fully cooked the fresh meat over open fire grills that you could see. They fixed It exactly how you liked it so it was absolutely delicious and put other burger chains to shame. Now the whopper is the same as any other burger out there, the same thing happened to McDonald’s food. Back in the day it was actually tasty food.
Totally agree!!! Had a same experience with BK in New York - but that was 30 years ago...
I'm a millennial and our generation is doomed. Lol
BK in the UK was like that too back in the day, now it is the same awful crap shown in this video. They used to actually flame grill the burgers now they are flame grill flavour, just terrible.

Making Kids But Better
I cannot believe I made these. I did everything wrong. My scale screwed up and I ended up with, I think, about 6 grams of amylase. I used regular flour (actually all I have in the house is first clear, so that's what I used). I used a bread machine dough cycle to mix it. I used regular rather than bread machine yeast. 1% milk. Left it in the fridge overnight. I only have an air fryer and convection toaster oven to bake in. Used 4 English muffin rings, made 2 by hand from foil, and used the "muffin" pan that came with the air fryer for 4. Thought I had burned the 2 I put in the toaster oven but they baked in 6 minutes (195F internal temperature!) and the ones in the air fryer went the whole 14 minutes by rotating half-way through. THESE CAME OUT INCREDIBLE! I'm gobsmacked. Utterly gobsmacked. I think my husband would appreciate it if I would shut up about how amazed I am. These are thick enough to cut for a double-decker and SO SOFT! Amazing.
Just for reference, BK doesn't use mayo, they use whopper sauce which is a mayo-based spread. Not far off, but it does taste a lot better than standard mayo. It has stuff like Cayenne, Pickle Juice, etc.
Lies again? Polite Home Delivery

Hey quick note: if the garlic turns cyanide blue over time (like a few days) in that pickle brine it's perfectly normal and still edible. It's a reaction between the chemicals the garlic releases from being bruised with the acidic solution it's sitting in that produces that blue pigmentation.
I’ve always wondered why this happens! Thanks for the info.
Yes. Create a gourmet burger to compete with fast food. Of COURSE the carefully constructed version would beat out the fast food version.
But I will say THANK you for the instructions to make a gourmet burger at home. Will definitely use when I can. 💗
The one thing I like about BK is that the burgers are wide, not tall. Makes it much easier to eat
When I was younger I hated "mayonnaise" until someone put mayonnaise on my burger accidentally and I said "this isn't mayo" that was when I found out that what my parents called "mayonnaise" was actually "miracle whip", I have liked mayonnaise ever since, nor have I forgiven my parents for their lie all those years, lol :)
I had a similar experience growing up. Hated Miracle Whip so much I refused to even try mayo since I assumed it would be the same. When I finally did it blew my mind. Loved it ever since.
What is this miracle whip and why is it so bad?
@@danielbateman6518 When I was young, it was much cheaper than mayo - Think Butter vs Margarine.
It was sweet and tangy, and absolutely awful, but people were saving money, I guess.

Yea, it was surprising mayo had such a different taste.
@@danielbateman6518 For one it is a little sweeter and is used and sold as a salad dressing. But many use it as a substitute for mayo.

Yeah, I thought that was very weird. Also, inflation must be hitting Houston hard for two double whoppers be be over $15 and that's with no fries or drinks.

As a Burger King employee, without even having to taste Josh’s burger, I’d say his burger is better.

As a patron of Burger King; 10:1 Josh’s burger doesn’t make you taste said burger for the next 4 days. 😂
Ye no shit Sherlock
Quite a bold statement if I say so myself
As a burger, i would say me is better.
The high school I went to was right behind a Burger King, when the weather was warm and we had the windows open, all you could smell was the burgers cooking. You don’t know how hungry by lunch time we all were. Burger King was always packed during week days. Even now when I drive past it during the week, you always know what time the school is out for lunch.
I’d wager you could tell what time school was out for lunch because it has lunch at the same time every day...
Same for me but with chick FIL a
Mine was across the street from a Burger King! And a Tim Hortons, a Chinese restaurant, and a grocery store. Then they tore down my high school and put a Walmart in it's place. 😔

Make your own liquid yeast, it take about 3 to 4 days for your first batch, its easier after that.
Blessings from Durban, South Africa.
I can't wait to try this. My hubby and I used to love Burger King 👑 🍔 but the past few years it's definitely not the same.
There’s no comparison, any homemade anything will beat any fast food item! You made the buns, Mayo, pickles and grind your own beef, seasoned all the ingredients, fast food doesn’t even salt theirs. Even if you did not take the extra steps and made the burger with store bought items (buns, Mayo, pickles and ground beef) it would have been 100%better.

I made this as I'm a fan of BK but hardly ever eat them and fancied a 'treat'. I didnt make the bun and I didn't charcoal grill my burger or make my own mayo ( Hellmans ) also used pickled gherkins from a jar. The result was a super juicy and flavoursome burger and no question your burger beats BK, even mine was definitely much tastier. It didnt take long to make from start to finish maybe 20 minutes and not much mess to clean up. It is worth the effort to follow your full recipe if you have time to do it and my burger cost about £3 for the ingredients as I used a 1/2 lb of beef. Thanks for your help. I will be making this again and will try some of your other recipes. You clearly know how to cook and your videos are snappy.

5:25 That's salivary amylase, specifically. Amylase is largely produced by the pancreas, and when the pancreas is injured, some of that amylase will go into the blood. Amylase levels in your plasma/serum can be tested and is useful in assisting in the diagnosis of pancreatitis (but outdated thanks to lipase being a better and more indicative test). :)
The reason amylase is outdated as an indicator for pancreatitis is that it is not specific to the pancreas, as lipase is. Amylase is released by the salivary glands to start the conversion of long, more complex sugar chains into shorter chains that we taste as sweetness. Because pancreatitis is treated mostly with empiric pain medication, people could pretend to have pancreatitis by rubbing the angle of jaw and... abracadabra, elevated amylase -> treat with morphine.

Good comment, bad formatting. Remove the returns on every line.
Their margins are so small because their products are not real. Hence why it's so cheap. And terrible for you
This format shows how to make the products better. He's not competing in making the margin they make, he's comparing the products.

Man. I gotta give you props for your cooking skills. Made literally everything from scratch..... But at this point this video should be named how to spend $40 bucks and 3 hours to make a burger. Of course yours tastes better man. You compared what could be considered a gourmet burger to frozen mass produced food. Looks damn good though.
made me cringe in the mcdonalds vid too
Yeah I feel the fact it's fast food made by teens for minimum wage isn't really taken into account and not everyone has time to spend making a burger
Exactly, UA-cam keeps showing me these in recommendations. Is good content and knowledgeable. But is basically taking a 14 year old kid and putting them against a 20 year martial arts vet in a fight. It is an easy win and easy content. I love burger king, reminds me of moments with my mom as a kid. Same with how enjoying a sausage mc griddle reminds me of saturday mornings with my dad. Its not the quailty its the memories that keep me coming back. Thankfully I am very big on eating at home so definitely dont eat fast food for 90% of your weekly food in take if you can avoid it.
Feel like you are entirely missing the point of the video. He takes a popular fast food item and makes it better. Hes not saying "this is how Burger King burgers should be" hes saying "I'm gonna make something like a Burger King burger but better and show you how to do it" hes challenging himself to make fast food better - not telling Burger King how it should be done.
@@skulledpitchingwedge71 he didnt even flame broil the burger tho
Idc the wait imagine how delish that be 😮💨 Joshua your a genius 😊
9:25 chef josh!
I made this today using your cookbook and my god! If thats not the most delicious mayonnaise in the world i don't know what is
As someone who use to work at one i find it really depends on the staff you have on and how much they cared - and it really wouldnt be hard to beat
I swear Josh hires a cinematographer, his videos are more cinematic than a blockbuster movie
Just bought your cook book can’t wait for it to get here!
that burger looks incredable!!!
I was a manager at BK back in the 90s. The whopper has undergone some changes since then(at least in my area), and not for the better. They no longer steam the buns which makes them hard and dry. They no longer use shredded lettuce so when you take a bite the whole leaf slides out. The meat now has like an artificial charcoal lighter fluid flavoring added to it(gross, I know). And for whatever reason whenever I happen to get one I always get the tomato butts. When I was running my store I threw the tops and bottoms out. I know it's fast food but I tried my best to at least make it palatable.
No wonder the bread is gross now it used to be my favorite everything taste off used to be so good
@marisol escobedo the only thing that I get at BK is the mozzarella sticks but that's once a week
Joshua's first day at Burger King: "Okay, Josh, order in, timer started, you have 1,5 minutes to sent that order out else they will yell for the manager and ruin the store!" Josh: "B..b.b.bbut I just took out the flour of the cabinet, how do you expect to make a proper burger what looks nice and taste premium under that time??" "Do you think we love to work here, Josh, DO YOU?" just my imagination scenario XD
Anyway I love the video, just wanted to point this out :) Also is there any fastfood burger what you like or "good enough"?
Yeah, it's WAY easy to beat a fast food burger when you spend half the day making buns, dill pickles, sauces from scratch. The entire point of fast food is FAST.
Exactly lmao
@ScrapperNoHand of course the biggest concern is cost, to put out a cheap product, cheap ingredients go into it.
@ScrapperNoHand why are you dunking on fast food employees like they have a say in the food they serve
Prep is important
SO 5 mins in and i will absolutely buy brioche burger buns from the shop. 100%
100% thought Krabby Patty right before you mentioned it Josh, great job! Spongebob would be very proud
Amylase is also an enzyme you can use in beer making! If you add it to the mash (your grain and hot water steep step) then you’ll be able to extract more sugar from the grain starches. There is an enzyme called amyloglucosidase that you can add in the mash^ and also while fermenting because it can also convert complex sugars into simple ones that the yeast can utilize. Cool to see more food science on the channel!
Still don’t know why this series isn’t called “But Bigger”
The thing i hate about it when people say "but better" is that it just isn't better, it's completely different and tastes nothing like the original food
@@CarpetHater if he really wanted to make a but better he would find an actual fast food meal he likes(which he doesn’t) and enhance the good parts and elevate them
@@kingworldadventures agreed, like if he tries to make a big mac for example, he should make a sesame seed bun, and make that perfectly instead of "let's make brioche buns because that's better".
The meatgrinder is also practical for making jams (marmelade? jelly? preserve? You know what I mean). Decore and opionally peel, then grind your fruit, eg. pears, before cooking. It's not chunky, it's smooth, but still has the whole fruit instead of just the juice (that would be gelee?).
The most beautiful burger I've ever scene. I have to try this
I only found out about amylase in baking a few weeks ago. Added it to my last batch of sandwich bread and the crumb was a little softer, but the crust was much softer. It also kept it from drying out for a few extra days. Homemade bread doesn't keep long so it's great to find natural ingredients that extend the shelf life.
Thanks so much for this video! Never salted tomatoes, tried yesterday and it was really big difference!
I really want to eat your cooking omg it looks sooo good!!
That burger is a work of art.
I find it Ironic that I just had a Burger King ad play before your video
he never realizes or states that the food he’s comparing to his own version is FAST FOOD and made to be quick and fast, he’s spending time and quality to make a better version but he calls his better which it obviously will be
true
He probably knows that bro, but the fun of his videos is to see something that we can eat world wide being transformed in a more heatlhy and tasty meal. I'm from Brazil and I can relate to his content, because he is dealing with something that we can eat here
also COST
if Burger King started selling those burgers they would be $100 at which point no one would buy them
@@mac2857 how? What special ingredients did he use that are soo hard to get a hold of? Make everything at the beginning of the day, keep it in cold but not frozen condition... People order, you fry up the burgers and you assemble it the same as always... :/ There are places where you can get good burgers fast guy.
Mans made his own buns and pickled his cucumber
