    Today we will cook a vegetarian borscht.
    To prepare vegetarian borscht you will need
    beets - 2 pcs. medium size;
    carrots - 1 pc.;
    cabbage - 1/4 of a medium-sized head of cabbage;
    onions - 1 pc.
    potatoes - 3 pcs. medium size;
    vegetable oil - 50 ml.;
    tomato paste - 100 gr;
    dry red pepper - 1 tsp;
    ground black pepper - 1/2 tsp;
    dry garlic - 1 tsp;
    salt - 2 tsp or to taste;
    sugar - 1 tsp;
    apple cider vinegar - 1 tsp;
    fresh dill and parsley;
    sour cream.
    How to cook vegetarian borscht.
    1.Finely chop the onion
    2.Grate carrots on a fine grater
    3.Cut the potatoes into cubes
    4.Grate beets on a coarse grater
    5.We chop the cabbage
    6.In a saucepan in which we will cook the borsch, pour oil, put the onion and fry until it becomes transparent.
    7.Add the carrots and beets, simmer for 10 minutes. we make sure that the vegetables do not burn
    8.Add tomato paste, salt, garlic, red and black pepper, mix well and continue to simmer
    9.then add the cabbage, stir and simmer a little more
    10.Add 2 liters of boiling water to a pot with vegetables and potatoes.
    11.Add sugar and apple cider vinegar. cook on low heat for 15 minutes. as soon as the potatoes are ready, turn off the borscht and cover with a lid.
    12. After 10 minutes, you can serve.
    13. Put chopped fresh herbs and sour cream into a plate with borscht.
