I did my footers the same way.......really rough appearance. This gives the concrete slab that gets poured on top something to bond and grip to. I used 3 1/2 inch Tapcon screws on my 2 x 4's that we used to hold the ICF blocks in place for the basement slab. Worked out really well. I also used the Fab-Form Zevelers which call for the 2 x 4 bracing on the footer. Nice job on the concrete pour. Concrete pours can be pretty stressful sometimes. I was thinking if you had extra ICF blocks, you could have used them for he bump out concrete forms. I am sure that crossed your mind and you had good reasons for how you did the pour. I think you did a great job on that garage bit, esp. considering that you were utilizing material on hand for the forms.
