Hi, heat the oil to the point that it gets hot but not smoking hot. Just bring your hand way on top of the pot and if you can feel that heat add the cumin seeds. Before adding the seeds lower the heat to low and then add the seeds. I often tell the beginners to add the seeds when the oil is just warm and then it gets fried gradually and you can keep an eye on it. Regarding mustard oil, I use Tez brand. If using mustard oil, first heat the oil till it’s smoking and then turn off heat, and add the seeds when the temperature of oil goes down a bit. Heating mustard oil very well removes its pungency
Just beautiful, Bumbi. Will try this, love lentils. Sometimes here in Romania I make polenta, mamaliga, mix with cheese and spread on an owen plate and grill it. I have used leftovers of this in pieces much like you made this dish, with both Italian and Indian style sauces. But now will try the lentils. Regarding the onion/garlic discussion I have never noticed that they make me aggressive or anything, on the contrary. But these are beliefs and cultural habits, no criticism at all. wow, this recipe looks so good, definitely be making these this week. First time I've heard of Dhokar but they look a fantastic way for me to keep my dad happy whilst cutting down on meat and luckily I have both chana dhal and yellow split peas :) Could you also sweeten these?
I used mustard oil for this recipe as traditionally mustard oil is used for this recipe but otherwise I use olive oil/grape seed oil for cooking( not extra virgin olive oil).

I already know that I would love this! It kind of reminds me of a lentil tofu. Bumbi, why aren’t onions or garlic used in strict vegetarian recipe? They are vegetable and they add so much flavor
Though they are vegetable for sure and undisputedly healthy as well (esp. garlic), however as per Hindu scriptures they do not fall into the "Sattvik" category. Sattvik foods are those which helps in maintaining a calm and peaceful mind, necessary for uplifting spiritualism. Those which tends to create aggression in a human mind tend to belong to non Sattvik category, e.g. onions, garlic, fast foods, non vegetarian foods, etc.
Hi Dianna, thanks for watching. We Bengalis we even have fish and meat during festival time but there are some days that we don’t and those are the days that a strict vegetarian diet is followed. Since onions and garlic go into cooking non vegetarian food, they are kept out of a strict vegetarian diet. For Bengalis fish is said to be auspicious 😀.

But don’t be put off by the pungency. When used properly, a pinch of hing supercharges every other spice in the pan. It is optional for this recipe

Shakkar is sugar in Hindi. So it’s the same, but sugar sold in India have much larger granules while here in the West it looks more fine.

That’s a great idea though falafel is made with chickpeas and dhoka is made with chana dal/ matar dal

Salt is always as per taste. You can always adjust the proportion according to your preference.
