Sundried Tomatoes - How to preserve and prepare

  • The sundried tomatoes you typically buy are packed in some sort of vegetable oil - however, if you can find the sundried tomatoes, not in oil, but rather just vacuum packed in a container or a bag, now you can easily jar your own, in EVOO - let me show you how :)
    Sundried Tomatoes - Preserving and preparing
    Ingredients
    • Sundried tomatoes (not in oil, but rather, vacuum packed in a bag or container)
    • Extra virgin olive oil (EVOO)
    • Oregano
    Equipment needed
    • Large bowl for mixing
    • Jars with lids (or any container with a lid)
    Directions and Process
    • Remove sundried tomatoes from their package, separate them, and put them in a large bowl
    • Pour EVOO over the sundried tomatoes and toss together (the sundried tomatoes need to each be generously coated with EVOO)
    • Add oregano to the sundried tomatoes - enough so each piece of sun-dried tomato has some oregano on them - toss well.
    • Put a TBSP or 2 of EVOO in a jar, then add some sundried tomatoes to the jar. Fill about ¼ full, then tamp the sundried tomatoes down, to tightly pack and to remove any air pockets.
    • Continue to fill 1/4 of the jar at a time, stopping to tamp them down each time.
    • Fill the jar to about 1 inch from the top - tamp again - then add more EVOO to about 1/8 inch from the top of the jar.
    • At this point, all your sundried tomatoes should be completely covered and well submerged in the EVOO, with no air touching the sundried tomatoes.
    • You can now just put the lid on the jar and that’s it - they are sealed and can store right on your counter or in a cupboard (so long as the sundried tomatoes are completely submerged and covered with oil, they will not need refrigeration and will stay indefinitely)

    Love the video on how to pack sun dryer tomatoes in oil for shelf life. I can see how some thought you were going show how to dry tomatoes. As I did lol
    But I find someone on UA-cam that shows that part. Here you can only get sun dried in a jar full of canola oil. Yuck !

      These ones came from Commisso's...I can not recall the brand name.....

    Nice, simple and straight forward. Should I put them in hot/boiling water for a couple of minutes to soften them up before I start the process. "Extra olive oil as a lube". lol

    Sir i got a bottle from the supermarket but how do i prepare them to eat? Do i eat it like pickles or do i have to heat it or something. I usually add them on my subway sandwich so i have only experienced the eating part.

      If the sundried tomatoes in the bottle were packed in oil, they will be ready to eat. You can take them out and eat them as-is, or, you can use them as a condiment and cook with them 👍

    How long will they remain in the jar before they go bad

      They will never go bad Doreen, so long as there is no air in the jar and the sundried tomatoes are completed covered with a layer of oil :)

    If the oil doesn't cover all of the sun dried tomatoes, does it go bad really quickly?

      ...if the oil does not cover all of the sun-dried tomatoes, then it would be best to just keep them in the fridge - they will also keep outside of the fridge for a few days, with no problems at all, but the refrigerator will keep them much longer :)

      @@ChyarasKiss the air bubbles need to come out. Fill you jar a little at a time, packing down as you go and topping with oil as you go. If some bubbles still exist, rotate your jar and tilt it on an angle so the air will escape and rise to the top 👍🙂

      yes you can, although oil does have a shelf life, so keep that in mind...you could even use that oil to cook with or drizzle over top of your bruschetta :)

    I thought you were going to give us the lowdown on making "sun dried tomatoes" not just repacking sun dried tomatoes.

    Re Malaka have you dried the tomatoes in the sun your self ???

      I did not, but you certainly can or, you can just use a dehydrator or even slowly dry them in your oven on a very low setting

      @@raresoniga820 they do not need any form of pasteurization and you can also use a dehydrator to dry them out👍

    Do you actually have a culinary degree because I do, and this is not preserving them. They must be refrigerated and even after that they’re only safe to eat for about a week. You could be getting people sick with your instructions in this video.

      I have stored my sundried tomatoes this way for years and for long periods of time (and so have my parents who were born and raised in Italy with no degrees) , and never had an issue and never got sick - never. The key is to ensure that the sundried tomatoes are coated in oil and then soaked and completed covered in oil with a good layer of oil on top acting as a barrier to air (no exposed sundried tomatoes - all completely under oil). If you do this, you will not have any issues. I suggest you give it a try :) We also grew up doing this with our homemade dried sausage...putting it in a container filled with oil and a good layer of oil on top - never any issue, never. It's a very effective method, ensuring no air gets at it - it is similar to vacuum sealing, which also keeps air away. Hope this helps.

      @@CookingwiththeCoias Thanks for your video and replies! I have one thought though: How do you prevent botulism with your tomatoes, since you are not heating the jars after filling and botulism grows in the absence of oxygen?

      I’m sure you think this is a “safe” practice since you haven’t died….yet. But just because your Italian grandparents did it this way, this is NOT how you safely preserve food. If you’ve ever had a stomach ache or diarrhea, that’s most likely been from food born illness. E.Coli, Listeria, Salmonella, Botulism, to name a few, are food born illnesses for not practicing safe food handling. These jars must have new lids and be boiled to properly preserve and remove any air from them. Oil does not preserve something. There’s many things that people’s family did years ago, does that mean it’s must be right? That’s being quite naive. Having a culinary degree guarantees you’ve been properly educated in safe food handling which you clearly have not.

      @@die0eule0ulrich ....if you feel more comfortable heating the jars and sealing them, by all means go ahead....I just never have and my family never has and we never had any issue with botulism nor any issue with anything, but boiling the jars and sealing them that way can certainly be done :)

      We Indians make pickles the same way with mustard oil, Sits on shelves for years without spoiling as long as they are covered in oil. Our ancestors had no degrees by the way.
