  • The hot cross bun's history is fascinating, blending religious, cultural, and culinary traditions.
    The origin of sweetened, spiced buns can be traced back to ancient civilizations. The Greeks and Romans had versions of sweetened bread.
    However, these ancient breads weren't specifically 'hot cross buns' as we know them today.
    The bun with a cross became associated with Christian traditions, specifically with Good Friday. The cross on the bun symbolises the crucifixion of Jesus Christ.
    It's believed that the tradition of eating these buns on Good Friday began in the 12th century. A monk in St Albans, England, is said to have marked the buns with a cross in honor of Good Friday, giving rise to the specific tradition of the 'hot cross bun.'
    During the Tudor period in England, the London Clerk of Markets issued a decree forbidding the sale of hot cross buns and other spiced breads, except at burials, on Good Friday, or at Christmas. This may have helped to cement their association with these specific holidays.
    Various superstitions were associated with hot cross buns baked on Good Friday, such as the belief that they wouldn't spoil throughout the following year and that they had medicinal or protective properties.
    The recipe for hot cross buns has evolved over the centuries. Initially, they were probably made with plain dough without the sweet and spicy flavorings common today.
    The modern version, enriched with spices like cinnamon and nutmeg, sweetened with sugar or honey, and containing currants or raisins, became popular in the Victorian era.
    The British colonists and migrants took the tradition of hot cross buns to various parts of the world, including North America and Australia, where it has become a staple during the Easter season.
    Today, hot cross buns come in various flavours and versions, including chocolate, apple-cinnamon, and toffee, reflecting contemporary culinary trends and tastes.

    Hot Cross Buns:
    Ingredients
    500g Plain flour/ All purpose flour or strong white bread flour
    10g instant dry yeast/quick yeast
    1-2 tsp salt to taste
    50g caster sugar
    2 tsp mixed spice
    1 tsp cinnamon
    1 lg egg
    50g melted unsalted butter
    350ml water at room temp
    300g of dried fruit/mixed peel
    Extra flour for kneading
    For the cross...
    75g plain flour/All purpose flour
    75ml water
    25g veg oil
    For Glazing
    2 tbsp sugar 4 tbsp water
    Apricot jam
    Mixed spice / similar to pumpkin spice
    1 tbsp cinnamon
    1 tsp Nutmeg
    1 tsp allspice
    1 tsp ginger
    1/2 tsp cloves
    1/2 tsp coriander

    oven to 380°F (190°C) 20 - 25 mins
    Air fryer 340°F (170°C) 18 mins

    Wow Rik, you read my mind … I was just looking for Hot Crossed Buns recipes online when your notification popped up! (Love your stand mixer by the way, had my eye set on one of those, but was sadly outwith my budget, so had to settle for a lesser brand which I treated myself to for Xmas & haven’t used yet - so this will be it’s maiden voyage!)
    So glad I watched your video, as I’d probably have thought I’d mucked along the way, producing such a wet/sticky dough mixture - none of the recipes I’ve read so far explains that this is to be expected, so I’d probably have added additional flour!🫣
    As always thanks for sharing 🙏, you’ve got my mouth watering for a freshly baked, toasted Hot X Bun slathered in creamy butter!🧈 Yuuuum!!! 😋. 👨‍🍳👌

      I was fortunate to have got the mixer years ago. I don't use it so often to be honest. I should and I will. It sounded a little rough to be honest. Good piece of kit. Only blown it up once, easy fixed. Yes this is a real sticky dough! Thank you. Best, Rik

    Just made it. Was very sticky to work with. Turned out very good. I used half amount fruit and more citrus peel because my family dont like what they call dead flies. Slathered margerine on mine - last of the butter went into the mix. So good.

    Thanks for the recipe! It went well. Only thing I’d change is the “cross recipe” I had too much leftover so will be halving that part next time 😇
    Self notes:
    -Decrease Cross ingredients
    -Try to mix longer at beginning
    -64g egg (no shell)
    - 200g D.fruits instead (personal preference)
    -170-180 //25mins
    -98-100g each
    Use largest Pyrex with lined paper
    June 2024

    Your hot cross buns look light as a feather Rik I’m looking forward to making them for Easter , I’ve made others in the past but they always turn out heavy , also my crosses were like concrete 😂so I turned to using icing lol , but don’t think I had added oil to the flour and water mix so fingers crossed for me 🤞happy Easter 🐣Amanda xx

    Alright, the dough is in it’s first rise and it tastes awesome. I always taste the dough to see if I missed anything. Can’t wait for the final product!! By the way, I bring your ginger cookies to a class I teach, and I’ve shared your recipe for ginger cookies Many times!
