    Taking Cooking food back to basics.
    Ingredients
    - Ready roll puff pastry - as much as you need
    - 250g ground pork
    -250 ground beef
    -75g breadcrumbs (optional)
    - 1 apple fine diced
    - 1 teaspoon salt
    - 1 teaspoon black pepper
    - 2 teaspoons dried sage
    - 1 teaspoon dried thyme
    - 1/2 teaspoon nutmeg
    - 1/2 teaspoon garlic powder
    - 1 teaspoon smoked paprika
    - 1/4 teaspoon cayenne pepper (adjust to taste for heat)
    - 2 cloves garlic, minced
    - 1 small onion, finely grated
    - 1 tablespoon Worcestershire sauce
    - 1 egg wash
    oven to 380°F (190°C) - 30 - 35 mins cook
    Air fryer 360°F (180°C) - 25 - 30 mins cook

    First time i made sausage plait was at school in cookery. A portion of that with chip's and beans, with a couple of slices of bread and butter. Cheers rik 😊😊

    Aw man this is a stunning dish, a centre piece, super tasty. Not made this for 20 years. I've got a similar recipe from when you used to collect recipes to go in a big binder.
    Here's the one I got if you or anyone wants to try.
    Ingredients.
    50g/2oz butter
    1 large onion,chopped
    1 clove of garlic, chopped
    2 Tbls freshly chopped sage
    2 Tbls freshly chopped parsley
    700g/1lb 8oz sausage meat
    Salt and black pepper
    1 - 3 top dijon mustard
    1 egg beaten
    450g / 1Lb puff pastry
    3 hard boiled eggs, halved
    1 preheat oven to 200 C / 400 F , melt the butter in a small pan, add onion, garlic and herbs and cook over a low heat. Stir occasionally until the onion is soft.
    2 put the sausage meat into a large bowl and combine with the onion mixture. Add salt, pepper,, mustard and most of the beaten egg. Reserving a little for glazing. Mix thoroughly.
    3 roll out the pastry to a 23 x 30 cm / 9 x 12 in rectangle. Spread half the sausage mixture down the centre. Put the hard boiled eggs on top of the sausagemeat and top with remaining mixture.
    4 slit the pastry diagonally on either side of the sausagemeat at 2.5 cm / 1 in intervals. Overlap the pastry at the top and bottom and tuck round the sausagemeat. Criss-cross the strips alternatively over the sausagemeat mixture.
    5 brush the top of the plait with the reserved egg and bake in the oven for 30 - 40 minutes until golden. Serve hot or cold.
    Serve with a watercress and orange salad tossed in vinaigrette dressing.
    And a light dry cider to drink.

    Looks good! Nice to see the apple going in, works so well with pork. I think I’d cheat a bit and strip the skin off some good quality sausages and make a big sausage roll. Time for lunch I think…

    Very nice Rik,I was chef at my local Schools foundation and was cooking for over 1000 covers a day and sausage plait was the childrens favourite we used to make about 50 plaits per lunch time when it was on the menu,used to use large puff pastry sheets with pork sausage meat in plastic sleeves each plait was about 12 inches long,always served with baked beans probably the childrens most favourite lunch with pasta and meatballs a close 2nd yours looked brilliant well done Rik.

    My husband is extremely difficult to feed. He hates everything that isn't steak, eggs and chips or chops, eggs and chips, or a roast dinner. I think even he would like this! I'm definitely going to try this on him. If he doesn't like it, all the more for me! I eat absolutely anything except capsicum and coffee. I was drooling watching this video! Thanks so much Rik!     Oh my goodness my grandmother used to make this only she used a loaf of unsliced bread and scoop it out and cook all the ingredients and crumble the bread and put it in them add all the ingredients and pop the lid on and put it back in the oven for a while. We used to take it on picnics it sliced well and was nice cold. I'm loving your posher version, it would be nice for a lunch with friends. I'm loving these recipes Chef
    I'd love this with a green salad for a luncheon with the girls...I can't wait to make it.

    I made a vegan version using a pea based burger mix, well seasoned and added onion, carrots and mushrooms. Served with coleslaw, mash and peppercorn gravy. Was a huge hit!

    This is a nostalgic moment - my mum used to make these when I was a kid. She did it with half sausage (on the bottom), half sage & onion stuffing on the top, and a layer of apple sauce between them.

    So many things I haven't had since I was a child.. Reminds me of a great big Forfar Bridie. Ooooh, I miss meat pies. My grandparents from Glasgow used to bring 'em to Chicago way back in the day & they'd sell them at picnics & such.

    minced or ground pork and beef about half and half portion is often available at my rural grocery store. The price is agreeable and now I have a perfect recipe for a tasty alternative to yet more burgers. I plan to make mine as small servings on puff pastry triangles that I purchased at at discount prices. As a pensioner my cooking budget is limited so I improvise. The egg wash technique is a huge improvement in my skill level and results.

      Yes, he certainly did! It's easy, but fancy enough looking for company or a pot luck. Maybe with a pretty sprig of sage on top for presentation.
      It's just my kind of hearty sort of thing!

    Love the way you've presented this Rik. I love cooking, but I've always had a slight fear of doing the plait... just because I'm not artistic in that sense. This is the best video I've watched, I'm actually going to give this a go.
    I think I last made one at school in the 80s 😂 but I'll often do homemade sausage rolls.

    Well, today is march 25 and wish me Luck 🍀, I am getting up my courage to do this tonight for dinner ..I have a a roll of bulk mild italian sausage and some plain ground beef 80% fat..the sausage is low in fat, always needs some fat in pan when i have fried it up before..really nice and lean , So I am “winging it” here. will add some apple bits and maybe a little onion, maybe an egg ,.. it is my first time with puff pastry. Hopefully the first of many . I always enjoy reading the comments and suggestions of everyone here @ Rik’s. I am amazed to learn that kids in the UK got food like this sausage roll in pastry regularly at home and at school. lucky ducks! ❤

      @@BackyardChef Thank you, Rik. the meat mixture went togehter just fine. … I got as faras the puff pastry.. the sheet cracked & crumbled and fell apart I had thawed it @ room temp per directions on box. . I tried to patch it back together.. i have a damp towel on it and covered with plastic wrap..overnight. I noticed the label said “gluten free” in rather fine print. My son picked up 2 boxes for me not very long ago, they were frozen, and kept frozen. IDK what happened., gluten free or poor quality or freezer. burn? . Third time is the charm I hope. (first time I bought Phyllo. by mistake tbh i did not know the difference) i will have to personally shop for better quality puff pastry Do you have any advice & reccomendations? The box I have has no information on the size of the sheets. inside . the length box fits the width of a large cookie sheet but they are too small for a sausage loaf. and heck! i want to make that braiid. 😎

    Years ago I used to make a sausage meat pie, sausage meat from local butcher, and always added sage& onion stuffing mix into the meat,made short crust pastry .made a very tasty mid week meal, not expensive either! That big one you made looks so good, I’d make it if all the family were still at home! ❤

    As kids we didn't have a potato peeler, it was all done by knife. We used to see who could peel a whole apple without breaking the peel!

    That looks like a very nice sausage mix. I've just bought a load of boneless pork shoulder at just £2.46 per kilo (Sainsbury's nectar card price), plus some beef, to have a sausage making session this week, and I will certainly use your recipe, some in pastry but mostly as bangers.

    Nice to put mince beef in one ,I use just sausage meat and sage and onion made stuffing mashed into it, or like you said other versions of it. a great take on a very good bit of grub. we cook very much alike, pity you live so far away I would love to have you and the good lady for dinner.

    I'm a subscriber, I've made several of your recipes and will be having a go at this one.
    However, was your pastry a tad under cooked on the top? Didn't see you eat much of it LOL. Sorry, I don't mean to criticise, but I did have a little laugh over it.

    Pastry is not even cooked. Too thick. It's far from what puff pastry should be. Each to their own.

      Agreed too thick at the top. Just like I say on the video. Cut the triangle as big as you like. I like the crisp and stodge, that's my thing. The middle is just crispy pastry, not for me. Thank you. Best, Rik
