    my favorite parts: your explanation on how bean curd sticks have 3x the protein of tofu, the star on the shitakes and the ending where you go through where to buy the bean curd sticks

      It's not accurate.
      The yuba in its dry state contains a large amount of protein
      But as soon as it is absorbed in water, the relative amount of protein decreases.
      But for vegans Yuba is definitely a recommended food to supplement proteins

    This looks delicious! I love yuba but usually just toss it in with other things like soup - it's nice to have a stand alone recipe where it's the highlight of the dish instead of an accompaniment. Also, i hope you'll have an english version of your cookbook in the future, I'd love to buy a couple for myself and others in my life. Thank you for your wonderful recipes! 🥰

    The way you arranged the shiitake mushrooms in this beautiful blue and white bowl is more painting than cooking. I will definitely look for dried tofu skin sticks when I’m „downtown“ again. 🤤

      Thank you very much for your feedback! Potatoes are a common and important ingredient in Chinese home cooking. However, it is an interesting phenomenon that they are indeed not often found in Chinese restaurants around the world. Maybe it is too common and not very easy to highlight Chinese food.     Love it!!! I substitute with chicken bits, carrots and snow peas in place of potatoes to limit the glycemic count and it turned out great 🎉!! Thank you for your video!

      Thanks for the feedback, I'm so happy that you're going to try this recipe! Dried shiitake mushrooms are perfectly fine, soak them in hot water for 30-40 minutes and then use them. The water in which you soak the shiitake mushrooms just so happens to also be a substitute for the veggie stock in the recipe. Happy cooking and bon appétit!

      Mixed fresh cremini with dried shiitake (and used the soaking water), and substituted kohlrabi for potato as my partner intolerant of potatoes. Best use for kohlrabi yet. Tasted great, will be making again

      Hello! yes exactly this is a mini wok from Staub. A few years ago I found it. I have just looked at Staub website, unfortunately I can no longer find this model, but on amazon under "Staub cast iron baby wok" I have seen something similar...

    Instead of corn starch, can I use Tapioca starch and the same amount as 1 Tbsp?

      No problem, you can use tapioca starch instead. The first time you do this, it's best not to pour all the starch water in at once, but to add it slowly to achieve your favorite consistency. Happy cooking! Happy New Year!
