Wow, they look wonderful! here's a question tho... the takoyaki sauce seemed really sticky&syrupy compared to the sauces I've seen so far. Was it teriyaki or some other kind of sauce, or was it just a different brand?

That is regular ginger, not beni shōga. Beni shōga is entire different and has a unique flavor and different fermenting process.
