Maria Emmerich has a carnivore/keto bun recipe using egg white protein powder, water, grass fed beef gelatin, a little sea salt and a little bit of allulose for browning. This can also be done with liquid egg whites just omit the water and keep all other ingredients the same. She uses a large ice cream scooper when putting on parchment paper paper or silicone mat for baking. They're amazing! I've since added bamboo fiber powder/flour to her mix as well as shredded frozen grass fed butter with a big dollop of low carb yogurt (Two Good brand)...TOTAL GAME CHANGER. The bamboo fiber and gelatin are the two key ingredients. Light and airy like regular baked goods. I make a bread loaf weekly and use it for buns as well.
Preferably consumed fresh or left covered over night but consumed the next day, you can always freeze but consistency will not be the same as freshly baked

Doesn't adding milk powder effect the carb count in these? Cream has wayyyy less carbs than milk but I don't know if it comes in powdered form. You can, however, get coconut milk/cream in powdered form. I wonder how that would turn out. Just another thing I've noticed with lots of low carb bread demonstrations: no-one ever says how it TASTES. For me that's the most important part. How does it taste?

Beef (and pork) gelatin is made by boiling skin, bones, even hooves. I do not use. I wd try arrowroot or something else. I don't eat jello either.

I grew up in Estes Park. I think that's 7,000 ft. You shouldn't have any issues with the eggs staying fluffy. But cream of tartar will help anyway.

that tiny amount won't add much over all. ot enough to your over all carb count for the day
