I made these 3 times now. I do use heavy cream powder. I make only ½ the recipe at a time. It matters that you wisk the baking powder well with the egg. It gets frothy. I get 2 bigger or 3 smaller buns. The baking powder has a bit of a salty taste but I just made a chicken salad with sour cream and it was so good on a bun!!🎉

1.5 cups of dry milk = 60g carbohydrates. Most people doing carnivore don't wanna eat that many carbs. Just a thought. I actually really like the bread done by Chris Cooking Nashville. Uses egg white powder, whole eggs, cream, and baking soda. The cream makes it quite moist and really good flavor.
I don’t think heavy cream would work the same way. Keto bakers, such as Carolyn Ketchum, use whey powder to give structure and texture to their breads (because of the protein structure that whey provides). Heavy cream would be mostly fat.
I made these today. They are delicious. I wisked the eggs and added directly to the other 2 ingredients (I sifted my baking powder since it had clumped a bit in its container). I weighed out the dry ingredients by grams to be sure I wasn't using too much. I also cooked them using a cooling rack (covered with parchment paper) on top of my baking sheet. This kept the bottoms from browning too much. I cooked them 13 minutes. So delicious! Since I don't eat sugar, they taste sweet (from the lactose). Next time I might try using unflavored whey protein powder. The consistency might be different though, and using 1 & 1/2 C of my protein powder might not be as cost effective...I haven't done the math.
Mex grocery has whole milk powder. All the milk powder in the grocery stores is skim milk. Which would make it higher in carbs. The whole milk powder might be less since part of the amount needed would be partly milk fat.
I thought this recipe was intriguing as well and did some research. Beef Boss used lactose free milk powder - its in the notes. Amazon offers the brand Dairy Sky which has a lactose free milk powder so I reached out to them. They told me they filter to reduce lactose, then add lactase to offset the remainder to devolve to simpler sugars: galactose and glucose that most people don't have digestive upsets from. A 2 tablespoon serving reconstitutes 1 cup of milk so the nutrition is comparable to Fairlife. At 2 servings (4 tablespoons, which is what is in 1 of 6 buns from this recipe) the carb count attributable to the milk powder would be 12 to 16 grams, depending on brand of lactose free. It is far higher for regular milk powders. So that gets too close to 20 for someone already losing some of my carb budget to the cellulose in my meds and supplements, particularly when it is likely I can stop at one bun for my one main meal. Well, I made these yesterday and they were sooo simple. put lots of butter on them and my husband said these taste like something familar.. we both said cresent rolls at the same time.. Thank you for this recipe will make some gravy for with them on special occasions

The only milk powder I can find here in the SW of Western Australia has an emulsifier - Soy Lecithin. Personally, I'm more rigourous on removing the industrial processing elements to anything I eat, as I'm not insulin resistent/diabetic. I also don't seem to have an issue with wheat, though I always buy organic, old grain versions and use/consume sparingly. 95% of the time, I'm pure carnivore, and fully in control of what makes up the remaining 5%. I definitely believe that the greater evil in our food supply is anything listed after the words (as an example) 'wheat flour, water, salt, yeast' on any store bought goods. Seed oils, emulsifiers, preservatives, 'natural flavours/colours', stabilizers etc. Add in the pesticides etc. used in all commercial agriculture and it's no wonder how unhealthy and damaged folks have become!
I can’t find powdered milk without sugar. I did try it with what I had, and the buns turned out nicely. But, I found I had to use them fresh as they hardened over time. I also used an air bake pan to minimize the darkness on the bottom.
I’m currently on a red velvet kick (unrelated). I was thinking of picking up some buttermilk powder for that purpose. I think it’s on the baking aisle. I may try powdered goat milk as well since I’m not as lactose tolerant as my kids. That may be on the same aisle as PET milk and shelf stable coffee creamer in the purple and white bag. I’m pretty sure I’ve seen both at Publix (fellow Floridian) and Walmart.

Milk can also cause weight loss stalls. The only way one would know is by eliminating milk and cream. If you think about what milk is meant for, it is to help baby mammals gain weight and grow
It sounds good! In case you don't know, you can make your own baking powder using 2 parts cream of tartar and 1 part baking soda. It might be a little more carnivore friendly than regular baking powder. I use cream of tartar to get my potassium.

I personally don’t do dairy on the carnivore diet nor would I use baking powder due to corn starch 🤷♀️. But to each his/her own for sure and I read label on butter (my only dairy product) because some salt free butter (Kerry gold) adds “natural flavors” and skim milk which makes zero sense should only be pasteurized cream like the salted version!
This recipe has 66 grams of carbs which is 11 grams per bun!!! It's ridiculous to call it keto friendly! I may try it with t whey powder someone else mentioned but I would never make this recipe. Stop calling something ketovore unless you know what you're talking about.

Air fryers/convection ovens it’s best if you lower the temperature 25 degrees. I had a bakery and baked cakes in convection ovens daily.

This recipe has 66 grams of carbs which is 11 grams per bun!!! It's ridiculous to call it keto friendly! I may try it with t whey powder someone else mentioned but I would never make this recipe. Stop calling something ketovore unless you know what you're talking about.
