Really it is. I found this channel and this amazing chef like idk 6 weeks ago. Spent at least a dozen hours watching this man cook. Learned so much here, starting with mixing olive oil and butter in the pan, but no end of lessons in sight ;) Seen pictures of him on google and i know this man was a special person. Thank you so much Daddy Jack and thanks to your family for keeping this amazing, heart warming blues cooking content up! Love from germany!

Not some Bobby Flay or other celebrity chef, you are the real deal and so smile because you know flavours and how to get things done without all of the magician tricks and it is for that, that you are seen as, GENUINE. I am in AWE of what you can do with a few ingredients! I wonder....what can you do with 1) potato, 2) sausage (or beef), 3) tomato, 4) Italian seasoning and zucchini?
Daddy Jack, why don't you grind your pepper freshly into the food instead of mixing it with salt? I know this saves a little time but wouldn't the pepper be more tasty if it was freshly ground? Same goes for the salt I suppose. Thanks for responding and awesome video! :)

Is that clarified butter you use all the time? Or just plain butter with olive oil to raise the smoke point?

May I ask, why not using canola oil for the pesto?
There are very few differences. Canola oil is a vegetable oil. In this recipe, it makes no discernible difference. Just a preference I would think.
