I made it with fusilli because I don't have much funds for the pasta (can only find it online, no places near me seems to sell colonne pompeii) It's so delicious! One day I'll make it with the right pasta but for now I'm really happy. This recipe introduced me to pink peppercorns and I'm in love! Adding it to anything I can. 😂

I made this! It's not as gorgeous as yours because I was unable to find the pompeii pasta in my area so I used just regular fussili (🤦♀️) but it came out beautiful nonetheless! Thank you Pasta Queen!
I would grind the cheese nuts and garlic in a mortar to really crush the almonds into a paste. I used to make pesto in my food processor but it just grinds the nuts into little bits. Then I found out that the authentic way they make pesto in Italy is they grind it in a mortar. This turns the nuts into a paste and releases the oils in the nuts which is where the flavor is. If you just grind the nuts in a food processor you get tiny little bits of chopped up nuts. If you grind the nuts in a mortar you get a paste like peanut butter and this is what you want. When I made pesto in the food processor my pesto had a grainy texture from all the little individual bits of chopped up nuts but when I started making it in a mortar it was completely smooth and creamy. The more I cook the more I find that how you combine the ingredients is just as important as what ingredients you use.
