    Prepare to taste the most flavorful Bengali Mutton Kosha curry that will transport your taste buds straight to Kolkata! This recipe is the go to meal on most Sunday lunches in any Bengali homes.
    Our Choice when it comes to cooking Kosha Mangsho is Very Clear - We like it simple and cooked with home made spices - The kosha-no or the slow frying of the spices makes this recipe taste special. Again, the secret to a perfect Bengali Style Mutton Kosha recipe lies in the right balance of the spices. 2 fsctors are critically important - Duration & Timing of every activity! Also very very important is the Cuts of Mutton you get from the market - in this regard, we trust our regular Mutton Shop only.
    We prefer our Kosha Mangsho with Plain Steam Rice.
    However this recipe forms a good combo with Basanti Pulao, Fried Rice or Biryani; you can also enjoy this recipe with Plain Roti, Rumali Roti, Tandoori Roti or Naan.
    This unique and traditional Bengali Mutton recipe throws a strong challenge to the Bihari Style Champaran Handi Mutton recipe - although this can generate a long debate - Do comment and let us know!

    Ingredients:-
    Mutton - 1 kg
    Mustard Oil - 200 ml
    Onion - 3 big sizes (Need Chopped, Sliced & Paste)
    Black Pepper Powder - 2 teaspoons
    Garlic Paste - 2 teaspoon
    Ginger Paste - 3 teaspoons
    Green Chilli Paste - 2 teaspoons
    Whole Red Chilli - 2
    Whole Bay Leaf - 2
    Whole Cinnamon Sticks - 1
    Whole Green Cardamoms - 3 - 4
    Whole Cloves - 3 - 4
    Tomatoes - 2
    Potatoes - 5 big size cuts
    Coriander Powder - 2 teaspoons
    Red Chilli Powder - 2 teaspoons
    Yellow Turmeric Powder - 2 teaspoons
    Curd - 3 Tablespoons
    Garam Masala Powder - 3 - 4 tea spoons
    Amul Butter - 1 tablespoon
    Everest Meat Masala - 2 teaspoons
    Cooking Process:-
    1) MARINATE the mutton with Onion, Garlic, Ginger, Green Chilli paste, Curd, Red Chilli Powder, Turmeric Powder, Black Pepper Powder, etc.
    2) Fry the potatoes and keep aside
    3) Saute whole Garam Masala, Sliced Onions, Ginger Garlic and Green Chilli paste, Chopped Onions, Chopped Tomatoes, Coriander Powder, Black Pepper Powder, Red Chilli Powder, Turmeric Powder, Everest Meat Masala, etc. and slow cook with the marinated mutton on a Kadai.
    4) Add Butter & Garam Masala powder. Pressure cook the cooked mutton with little water for 10 to 12 whistles along with the potatoes
