Hi there, Olya. Those ukoys look good. But I have a tip for you. Ukoy is not supposed to be like a soft, fluppy pancake. It has to have a crunchy texture. To make it crunchy, you should use more cornstarch and just a small amount of flour. It is best to use 3/4 cup cornstarch and just 1/4 cup of flour. You can also add just a pinch of baking soda to the mixture. So, the batter should include cornstarch, flour, egg, baking soda, salt, pepper, onion powder, and garlic powder. You may put fresh onion and garlic, but they will burn in the frying process, so it's best to use onion and garlic powders. And what's more, ukoy is deep-fried, not shallow-fried in moderate heat.

The next time you make it, add more chopped garlic and either use small shrimps or chop regular shrimps into smaller pieces so it's easier to chew; and for dipping sauce, mix vinegar, chopped garlic, and salt. If you want to add soy sauce to the dipping sauce, you may do so as well. They go very well together. Try it. :)
Not the typical Filipino Ukoy but a very good and original version of Russian Ukoy. Not bad and still looks good and yummy. Filipino ukoy is usually dip in spicy vinegar composed of vinegar, pressed garlic, chopped onion, ground black pepper and chili .
