I can hear the real emotion in your voice when you describe the poor man who lost his grandson. They say you can't really know someone well from behind the camera, but I can't help but feel like you're a great person. From a longtime fan, thanks for all the entertainment, delicious recipes, and for providing a very interesting window into the "real" cowboy culture.

For anyone watching this from my side of the pond in the UK, the Chorizo Kent is using is Mexican Chorizo, not the cured Spanish type. We can't buy it here, but it's easy to make, there are lots of recipes on the Internet.

Just a quick note from someone who grew up with manicotti. To fill the dried pasta use a pastry bag OR put the filling inside a zip lock style bag, then snip a corner off the bottom with scissors and squeeze the filling in, also if you have one, a sausage stuffer does it very quick.
Thank you for all the great recipes!

@Stop The-insanity I bought mine off craigslist for $25, but I've used old barrels before to smoke a ham. They're not complicated, just remember slow & low... above 180°F but below 250°F and smoke for a while then cover in foil and place back in smoker until done. It's about 2-3 hrs for ribs, 4-6 for larger thick cuts & then about 8-10 hours for a whole hog (depending on size)

Mr. Rollins, I want to Thank You Sir personally for all of the great videos you make. It's not just about the food it's about who you are as a person and how you treat people. I love how you thank the veterans and first responders. As a former police officer myself I want to personally Thank You for the amazing content. I know you have so many followers on here and everything, but I hope maybe one day I can shake your hand and say Thank You face to face. There is so much garbage on UA-cam now a days, but your channel is amazing, and I am very grateful to be a subscriber to your channel. Glod Bless You Sir!!!!

Kent, first I love the cooking show that you and Shannon do!! Comment on ice box. I'm 76 so I've been around a while. When I was very young, some of my family had a wood cabinet, insulated and the ice man would come and deliver big squares of ice. It was placed in the "ice box" and kept things cool enough to prevent spoiling. The ice man might have come every day? I grew up with us having an electric refrigerator. Just sharing.
Thanks for this recipe. It looks so good! I'm going to try it. Papa Bob in MO.

Hey Bob, I'm 10 years younger but remember riding to town with momma and getting ice blocks from the icehouse. The blocks would slide down a shute and the iceman would use big tongs to load into the car. c1960s, Duncan, Oklahoma.

I have had all the stuff for shotgun shells but kept procrastinating thinking it'd be a pain. Watching the video makes it seem straight forward and easy enough especially with a clear explanation and demonstration. Add a new line to your resume....motivational speaker. I'm giving this a try pronto.

Use a large ziplock baggie like a icing bag to load that meat mixture into, just snip the corner off to squeeze it into those pasta shells. I use these shells all the time for both cheese and meat mixtures makes the job quick and relatively painless💞

Great video recipe and channel. I made these with small burritos wrapped in bacon they were amazing. I now have a box of manicotti for my second go at these. I seen that after mixing your filling put it in a ziplock or piping bag and you can fill the shells in a 1/10th of the time.

@@ambervereide6612 No, letting them sit in the fridge a few hours with the innards already inside should softer the shells enough that they will be soft after cooking. Oven will do just fine. Good luck.
