BA vidoes dont excite me the way it did before. the people that i grew to love left and it just doesnt feel the same even though chefs like brad and Chris stayed. Miss you guys.
It's just when you were friends with someone and then learned some really disturbing stuff they have been making, and now even if they say they have changed you can't look at them in the same way.

I have to say, Croquetas in Spain are most often made out of a bechamel base, not potatoes. Not to be confused with the Italian version, Crocchè di Patate, which is made out of potatoes.

@@radbu1075 Lots of folks (including those running megamarkets) think eggs are dairy, or at least classify them as such. You know, cuz cows are squeezing eggs outta their udders, or something. I had a friend, who made me tiramisu for my birthday some years back, freak out when I told her I was eating the leftovers a few days later: NOOO!!! DAIRYYYYY!!!! uh, 'wut'? And no, did not get sick.
Maybe she has an egg allergy.

They were all so soupy! I'm kinda sad I didn't see any classic versions with a stiffer texture and a big pool of butter in the middle. Add fresh black pepper and you have the perfect mash.
I used to love the “ pomme puree” style but the older I get the more I’m moving back to the fluffy mush my maw made when I was a kid.
Melissa did a stiff potato but that’s like the whole point is a upgraded different version of potatoes not a classic version
I don't know if this is a callback to two years ago or just because potatoes are cheap, but potatoes don't need to be upgraded. Keep them simple and upgrade what goes around them. Maybe I'm really not the demographic anymore. I'm sick of overcomplicated recipes. These aren't recipes for home cooks. They are for cook-once-a-month people.

Da Bomb smashed tatoes:
2:1 russet potatoes to a waxier potatoe like red or yukon.
Peel the russets, peeling other potatoes optional.
Cook both until fork tender, i.e. mash ready. Set your red/gold potatoes aside.
Put russets in whatever receptacle you're going to mash them in. Add your dairy (lots of butter, milk, heavy cream, sour creme, butter milk or clotted creme, or any combination of the above). Add your favorite herbs (I like dill and parsley) and salt n' peppa peppa peppa to taste. Add parmesan or other hard/dry cheese. Minced garlic (or roasted garlic mash, even better).
Next, chop up your red or gold potatoes into whatever size pieces you like, I like bite-sized. Gently mix them into the potato mash.
Top each serving with a sprinkle of green herb and cheese, and/or gravy if it's that time of year.
