Sorry to say that from the Aubrac (Aligot is from there), but "Mozza" and "Gruyere" or "Emmental" aren't part of the Aligot, cause it's some "Fresh Tome" with the potato. Otherwise, it's not aligot, just... mashed potate with cheese. It's not the "texture" who made the dish, but the taste.
I love cheese and I love potatoes. How did I not think of this before?

This looks like how my culture (Black American) prepares our mashed potatoes. It’s the same exact ingredients, we just don’t go ham on the cheese.
