- ANGLO-INDIAN BOBO CURRY / A SIMPLE CHICKEN
Ingredients:
1/2 chicken cut into medium size pieces or chicken legs
2 large onions sliced finely
1 or 2 green chillies slit lengthwise
1 or 2 teaspoons mild chillie powder (Reduce if desired)
1/4 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
2 tablespoons oil
Salt to taste
1.5 teaspoons ginger garlic paste
2 tomatoes chopped finely or pureed
3 tablespoons chopped coriander leaves.
Method
Marinate the chicken with the chillie powder, coriander powder, turmeric, cumin powder and salt.
Heat oil in a pan and fry the onions and green chillies till light brown.
Add the ginger garlic paste and sauté for a few minutes.
Add the chopped tomatoes and sauté till the tomatoes turn to pulp.
Add the chicken, mix well and fry for a couple of minutes on medium heat.
Now add the chopped coriander leaves and mix well. Stir fry for 2 or 3 more minutes.
Add 1 or 2 cups of water (depending on how much gravy is required) and mix well. Cover and Cook on medium heat till the chicken is tender and the gravy is a little thick.
Garnish with chopped coriander leaves.
Serve with rice, bread or any Indian Bread.

Ha. Literally just sat down and thought I’d check out your channel in more detail after making a big batch of my mums chicken curry which is a slight variation on yours. Used your Hells Flame Chutney recipe to accompany it! It was one of the few recipes I didn’t write down before she passed.p and it is exactly as I remember it! Will defintely be trying your pepper fry which was another one I missed but one of my favourites. Thank you Bridget so much for keeping our amazing food alive!

Thanks Bridget, this was a regular dish mum used to make for us. I have all the ingredients plus some chicken in the freezer so will make it this week because it’s still nice and cool in Perth.

Hi Denise are you referring to steamed Dumplings ? We used to call them fairy tooth cakes as the finger marks on the dumplings resembled teeth. It was also made when a baby cut his or her first tooth
