We mostly use paper charts in the cruising guides for ICW and east coast. But navigation for the waterway is definitely on the chart plotter too. For the Bahamas, Explorer books. For the Caribbean, the paper charts in the Doyle cruising guides.
End of October. We were racing the cold weather to try and get to warmness! Left just after the last hurricane went through. Always a tight rope between hurricanes and cold weather moving in.
Ooof 25 degrees of heeling! How many miles from the coast were you? That’s the same area offshore that Andy got caught in stiff overnight winds too...dang Mother Nature :) Be sure to post the recipe for Mexican lasagna! Yum!
We were about 10 miles offshore. Definitely a "lively" sail 😂 Mexican Lasagna Saute ground meat of your choice with Mexican spices (cumin, chili powder, garlic and onion powder, smoked paprika, Chipotle powder) Add in chopped onion and pepper cook until soft. Add a can of drained beans(I like black) until heated. Layer in a baking pan- -tortillas (corn or flour) -meat and bean mixture -shredded cheese Repeat layers until all mixture is used. Bake on 350° until cheese is melted and bubbly. We top with lettuce, tomatoes, salsa, guac, sour cream, cilantro, or whatever you have on hand. Sometimes I leave out the meat and just add more veggies. I also add a can of tomatoes occasionally...I can't decide which way I like better. It's a really easy recipe to change around to fit whatever you have on hand. Hope you like it!!
