    On Wednesday afternoon, Bon Appétit posted a video featuring Tyler Akin, a chef at Philadelphia-based Vietnamese pho restaurant Stock. In the video - which Bon Appétit has since deleted because of the overwhelmingly negative reaction - Akin speaks about his philosophy on pho, which included telling those who eat pho how to eat it properly, which includes not adding Sriracha or hoisin sauce to the broth.

      I don't get it but I get the sense there is an angle to it I am missing because I am not from their culture to see that perspective. I have not seen the video and many of the hosts talking about it here have not seen it either so i'm inclined to believe they have a legitimate reason why the video got so much hate from so many people. Its a little weird that they didn't try to get more details from Kim in this video about why people are offended....her body language is screaming that she disagrees with the other hosts.

      Let it put it this way: You're using a political compass as your display picture. This represents your ideology, but you're using it to identify yourself and your beliefs.
      Identity politics, as it were, is a catch-all used to describe the back-and-forth regarding given names and terms, which is specifically what you're doing here with our disagreement over the use of SJW. It's a prime example of identity politics.

      Chinese-American food was invented by Chinese people based on American market demands. Ex: lots of sugar, lots of oil, lots of sauce, deep fried, etc.

      To put in perspective, this "a guy" is not some random guy, but a chief, a cook. It's not like he's gotta cook a gazillion kinds of dishes... only a few. And one of the few dishes he makes is Pho. Yet he doesn't have time at least to learn that it is COMMON among Pho eaters to have Sriracha and Hoisin sauce in the dish. Next he's gonna tell that you shouldn't eat Sushi with Wasabi and Soy Sauce... does this get any more stupid?

    It's a soup heavily influenced by French Cuisine. It's even argued that the name is derived from french. There is no such thing as cultural appropriation.

      the video doesn't suggest it's a "new kind of ramen". It's a common turn of phrase like "orange is the new black" or "tacos are the new pizza". It's making the claim that this "new thing" is now supplanting the popularity of this "other thing" that was once very popular. IOW ramen is very popular in the US and it looks like Pho is becoming just as popular if not more so.

      yeah i dont get it. Every culture has borrowed from other cultures but if its done after 2015 its considered cultural appropriation. I would consider it complementary if someone loved food from my culture so much that they chose to eat it often, study and learn about it. Any aspect of my culture i couldnt care less if someone tried to copy it.

      I've seen a couple of other articles around the web saying such. The TYT coverage is actually not as over the top as the other stuff out there. And this poor dudes restaurant is getting all this crap from yelpers over literally like 5 questions asked by Bon Apetit. Pretty terrible for something so minor.

      A lot of people have knee jerk responses to TYT's videos on these PC subjects so they don't give the video in full a fair assessment. But I've found TYT to be pretty reasonable the majority of the time.

      I couldn't finish this video because it was so outrageously bad. Their token Asian guest (DEFINITELY not a complete coincidence), Cenk's rant that took him forever to get to a not-very-relevant point about how he's thick skinned, the crappy jokes.

      +moppypuppy Here's the thing though that crazy "sect" is controlling the party (even before trump) to combat each other both parties started pushing more extreme ideas in a way to brand themselves. The right puts these ideas into people who otherwise would be far more tolerable take my uncle for example he's a white republican blue collar worker who happened to marry my aunt who's liberal and black.     I dont understand the heck why there is an outrage about the question but not the about the outrage by over-proud Vietnamese.
    I am a Vietnamese, and I don't put the black or red sauce into the soup at all. (but I do just it for dipping the meatball though). I think it is normal that people ask, and the cook actually asked a very valid question. His opinion is quite valid: putting the sauce into the soup just "de-tastes" the flavor.

      I don't understand the point of putting sauce in soup regardless of which culture it's from; pho, udon, chicken noodle, clam chowder... It's soup, not a burger or chips. The broth in the soup is supposed to be the "sauce."

      So I'm not Vietnamese and I add hoisin sauce to the broth because my viet friend did it. I just copied her but maybe because she's westernized too? I don't know.

      +bs4e no. In Vietnam most pho places also provide hoisin sauce and sriracha at every table. You don't have to put it in, but lots of people do. I've always done it. My parents do it, and they're far from "westernized," and they also come from different regions of Vietnam, yet they still eat pho pretty much the same way. Talk about how to eat banh xeo then we might get into an argument lol

      The chef is not wrong at all. The quality of Pho broth is different from one restaurant to another. We have to taste the broth first and then we adjust it to our personal taste. But the title is offensive though and white people just discover and enjoy our food trying to teach us the correct way (at least wrote by Bon Appetit) is a faux pas. Another thing is American public think our Pho and its name are from French "pot au feu". First off, anyone knows how Chinese "hu tieu" is cooked and its ingredients. I myself find our Pho is much more similar and closest to Hu Tieu. About the name, I think it derives from Cantonese word "Phanh". It seems that French people like to take credit for our national dish.

    I just saw the video. It's still easily found online. This chef repeats about two dozen times that this is how he personally likes to eat his pho, and he explains why he likes it that way. He then ends up the video with the explicit disclaimer: "That's my approach; that's not the only way. The beauty of pho is like you can do it however you want..."

    I live in Korea and I've seen so many monstrosities of Western food here. I'm not outraged. They don't obviously can't do European food 100% authentic. Same goes vice versa.
    Same with the people that made that video, they didnt mean to hurt anyone, they juat didn't happen to the "ins and outs" of Vietnamese cuisine.
    They just appreciate another culture's food. They might not get it perfect.

I lived in Korea for about a year, I understand what you mean, and I'm not saying I actually do agree with how people are reacting to the video.       And the tl;dr for those who don't even want to watch the two minute clip: it's blown out of proportion.
      The guy is a Pho chef who was complaining about how he wants his customers to eat his Pho; and what he believes is proper etiquette. It's typical haute cuisine pretentiousness. Not racism or appropriation.

      I have no clue what other people's problem is with this video but any chef that is so stuck up that they think that their customers should have the same preferences in seasoning as them is a pretentious dick. I'll stick with pizza delivery and not having some high and mighty cook who thinks too much of themself judging me because I love to bury it in garlic and crushed peppers.

      Thanks for the link. There's even a nasty comment or two. It's a chef who wants people to taste a broth that he worked hard on before putting in other ingredients. He wasn't putting people down or making racist comments. I wonder if he looked more Asian if he would have gotten the nasty comments.     To me this is the funniest thing I've ever seen. Is pho the new ramen is like asking if chocolate is the new peanut butter. But to be honest as far as the offense, it really speaks to a wider thing; white people don't understand Asia and it's many amazing aspects, nor do they care to. Too exotic to understand for many.

      Actually, she's NOT pronouncing it correctly. I mean technically, if we are to grade her on phonetically speaking the word, sure... BUT, there is much more complexity into pronouncing Pho. You actually have to use a soft "F" sound and curl your tongue back when making the "O" sound, so your tongue should feel like you're speaking an "R" sound. So, although you're saying a "Fah-j" sound, your tongue is being held back like it would be during an "R" sound, unlike a "Fah" sound, where there is no tension holding your tongue. So, instead of saying "Fo" or "Fah" it should be more like "Fauh-j."
      But maybe she's speaking it the French way... I know nothing about French Pho. FYI, there are apposing accounts to Pho's origin, so maybe she's saying it right from the French perspective.

    Ramen (literally translated as pulled noodles in chinese), are the hosts refering to the chinese original or the japanese or korean version or the product also known as instant soup noodles?! They all are pretty distinct styles of noodles dishes where the only similarity is that they usually come with a broth and some form of noodles.

    I saw the video that was taken down... he literally states "you can eat it how ever you want", just that some chefs take it personally if you just pour sriracha all over it without even tasting it first. Like if you go out for a nice stake dinner and immediately pour ketchup all over your steak in front of the chef without even tasting it. The "outrage" over this video is pure racism. They are claiming that because he is white, he has no right to talk about Asian food. Skin color is irrelevant! For all these racists know, this "white" guy was born and raised in Vietnam. These "SWJ" are making judgements and generalizations about a person based solely on the color of his skin. Sounds similar to how an other 3 letter acronym group treats people.       yeah, I was also gonna add that texmex is influenced more by northern mexican regional food, which is in many cases quite different than other regional foods. My mom who is from Guadalajara had never heard of burritos until she ate one in Ciudad Juarez (a bordertown)

    It's mainly one thing he mentioned in the video: That's if you don't do it his way, then you are offending the chef. This clearly indicates that his way is the right way, and if you do it any other way, then you are being offensive and inconsiderate to the chef - which is far from truth.
    He is taking a lot of the Ramen elements and mistakenly applying it to Pho. It would have been fine if he just shared his take, but he set a tone in which his way is the correct way.
    That's my main problem with that video. He was essentially saying that everyone who has been eating pho has been disrespectful to the chef - which shows a huge misunderstanding of what Pho is all about.
    The biggest sadness from this is that there will now be people who believe him and will not enjoy pho the way it was meant to - anyway you like, but instead try to follow his rules out of what the misguided perception that it is respectful to the chef.

    The video was taken down before I could see it, but comments about it were overwhelmingly in one direction: he's white. That is the objection. And those who have seen the video say that the chef specifically said, "this is how I like to eat pho. There are many ways to enjoy pho". Someone even pointed out a video made by a Vietnamese chef and his son which was basically the identical advice that the white guy gave.
    What people got offended by was that he was white. Pure and simple.

    My first ever disliked video on this channel :/
    The big issue was that the title of the video was blatantly "This is the CORRECT way to make this dish that is not in any way part of our culture!". See, Pho is Vietnamese comfort food-- if I were to translate the video to my own race, I'd be hella taken aback if someone made a video trying to tell me how to make fried chicken, grits, etc. It's our comfort food. It's part of our culture. The issue everyone is taking is not with the fact that they're making the dish or showing a different way to make the dish, it's that their approach was totally pretentious and off-putting.

    I don't have a problem with a white guy talking about pho. I have a problem with a white guy telling people "the proper way" to eat pho, when there is not "proper" way to eat it. I hate douche bag, hipsters who try to inflate their self importance by eating "ethnic" food and then telling people completely wrong information about it. If you want to enjoy food for the sake of enjoying food, awesome! But don't claim it's a hot new trend when Vietnamese restaurants have been serving pho in various American communities for decades. It might not be racist, but it is super pretentious and annoying. Imagine a Canadian person claiming "McDonalds is the new Tim Horton's" and instructing his viewers the proper way to consume a Big Mac. It's not racist, it's just dumb as hell.

      You're right, I'm not Vietnamese and I've never been to Vietnam. My experience of pho is limited to eating at the Vietnamese restaurants in the DC area. But I've never been made to feel like I'm eating pho incorrectly when eating there. People take my money and I get soup. That's part of why I like pho in the first place. It's not fussy, you just eat it and enjoy it. The clip of the video that I saw showed the guy saying not to put Sriracha or Hoison sauce in pho. I think that's ridiculous considering if that's not how you're "supposed to eat it" then why are those condiments there on the table in the first place? Are we also not be putting basil or lime in it as well? Is that just a mind game to see "who's not eating it correctly"? If he personally doesn't like those sauces and prefers the broth as is, then fine but he could have clarified that's his personal preference rather than the better way to enjoy pho. That's what I found pretentious. If you are not personally offended, great. I think videos like that are annoying. That's my perspective.

      xZeru001x Some times I live to put stuff in my soup and sometimes I don't. Unless I'm sick or having seasonal allergies, I like adding chillis and basil to my soup. If that's not how everybody does it, then cool, but if it's on the table and I feel like throwing it in, I take it. Sometimes the broth is great on it's own but sometimes it's not. The clip that I saw of the video (because I can't see the whole thing since it was taken down) didn't make it clear he was expressing just his personal preference. In which case, it's similar to how most food critics advise to taste a dish before adding additional seasoning because it's supposedly an insult to the chef if you don't taste it before seasoning. Most of the pho places I've been to are cafeteria, very informal places that I don't think care how people eat the soup as long as they pay in cash.

      If you truly watched the video and listened to his message, there should have been absolutely nothing controversial about what he said. It's unfortunate that nextshark threw an absolutely biased title and so many sheep-minded people bandwagons onto the hate without even considering what the guy said. He never mentioned a proper way of eating; he only mentions how he prefers to eat pho. He wasn't going against using sriracha or any other sauce with pho, but he did say to just try some of the broth before doing so, which I completely agree. This isn't the perspective of being a white person, this is the perspective of being a chef. People are too dense and tunnel vision on him being white. A Vietnamese chef would've said the same thing, but without backlash.

      He didn't say it was incorrect he asks for people to taste the broth first and talked about it from a chefs point of view, its no different than how cooks will cringe at steaks being drowned in steak sauce before having a taste of it first. He didn't say it was wrong but express that his chef peers want you to taste the broth before adding the sauce. This is probably important to those who have never had pho before. And your analogy is false as his comment wasn't directed at Vietnamese people but at his customers.

    Spaghetti isnt the most apt analogy since, frankly, Western European food (especially from Spain, France, Italy) is essentially ground zero for a level of typical, guarded, "authenticity" litmus tests that are generally accepted, even by regional standards.
    So it's weird to dismiss whatever annoyance or resentment is expressed over how *Asian* cuisine might be pretentiously misappropriated or misrepresented (especially when the objections are readily backed up -- there's no one type of pho, never mind one way of eating it).
    And really, it seems the criticisms came down to the definite pretentious tone of the video. People readily razz and mock $20 hipster "gourmet burgers"; the Bon Appetite backlash isn't that much different.

    I didn't watch the original video but from the description it didn't sound bad. I don't know if anyone else has said this but Kyle Kinnane addressed this years ago when talking about people who correct his pronunciation when he eats "foe". He may be culturally ignorant but at least he is supporting the Vietnamese community and raising awareness of this awesome soup. It's not like he was telling people to put teriyaki sauce in bibimbap or anything. BTW if the pho guy offended you and you don't get that joke off the top of your head you are probably just looking for something to be offended at.

    To anyone who doesn't know why people hate that video, imagine if some high-profile British chef from London who had no connection to New York City made a video called "How you should be eating New York style bagels". The video told you "Bagels are the new Pizza" as if pizza was just some trend that is now uncool, despite the fact that they are practically uncomparable and NYC is known for BOTH pizza and bagels. Then they start telling their viewers to never put butter on your bagels.
    Racist or not, it's unneeded snobbery to act like you know how to eat a certain dish more "correctly" than the actual locals. If that's how you want to eat your pho, go right ahead, but don't act like you're somehow a Phd of proper eating.

    On a food channel on UA-cam I watch regularly, a reviewer (who is half Asian) is eating pho at a Vietnamese restaurant in Toronto and the owner (who is Vietnamese) tells him to put sriracha and hoisin sauce in the soup.

    1) I do feel some of the commentary were overly sensitive. On the other hand 2) he didn't say here is a way to eat Pho, he said this is THE way to eat Pho. I think many were offended at someone outside their culture telling them how to eat something they grew up with.

      He did say that but the other way in his tone is not the right way. But I think the title is offensive. The blame should go to those who wrote those words.

    In Toronto Pho has been popular for a years. Lately I noticed Ramen restaurants popping up. Both dishes are great. But if you got a cold or flu about to come on, get Pho, its better then chicken noodle soup.

    Never understood the outrage. Some of my relatives in Vietnam don't ever put sauce in our pho broth; rather we use it to dip meat. And the majority of Vietnamese in Vietnam actually don't eat pho including my mother-in-law who still lives there and has no care in the world for it.

    bon appétit should have said, "this video is not made for sensitive asians." "pho is a fusion dish which inspired by french and chinese cuisine." "we want to show non asians how to enjoy this delicious fusion noodle soup which also culturally appropriated furthermore by the vietnamese themselves by adding sriracha, jalepeño, that brought to america in recent time."
