I was unaware at the time of recording that Variant Mode can only be unlocked if you have beaten the Chapter 8 C-Side. However if you want to gain access to this feature without the pain of completing that C-Side you can use Cheat Mode. Cheat Mode will give you access to every chapter and secret modes within the game.
I couldn't find out if it was on the Switch version or not (which means it probably is), while checking if it was on the platform or not I realized that this feature can only be unlocked if you complete the Chapter 8 C-Side or by using Cheat Mode. Cheat Mode basically gives you access to all the secret features in the game, so if you're interested, just look up how to activate it.
I have a keyboard like this too. Its a mechanical keyboard, its very busty, keys are large and the buttons have an unusual height. You have to press the key harder for it to budge and it makes a loud click everytime. it is incredibly durable at least.@@Gabriel-bx7xv

I didn’t know that either, but I still beat 8-c before trying cheat mode. I even beat it with the golden berry
