re: the forward tilting tests you did with DSLR cameras (with or without lenses), I suspect re-doing the tests with one tripod leg pointing forward in the same direction as the lense would yield different (better, positive results). You were putting the tripod at a disadvantage right from the get go by tilting it in the void created by the two front legs. Just saying!
The Manfrotto is pretty strong. As you saw in the video, it does have limits though, but i guess you just gotta try it to see if its for your full frame mirrorless camera.
