Lukewarm or even cool water will do, it just takes a bit longer to soften (which is perfect because it gives you the time to layer everything on before it becomes one with your surface). Love your charcuterie!
Using regular room temp water, submerge no longer than 10 seconds, apply fillings and working quickly, you don't want it too soft once you get to the rolling stage.

You need to soak the rice paper really quick in COLD water. It still needs to be firm and it will soften while you fill them😊
