    Little tip from a Puerto Rican--I cut the plantains and leave them in water for a few hours, dry them with a paper towel and when I fry them they come out fluffy and delicious. Thank you for this video, I am so excited!!!

      My mother-in-law from Bayamón, PR always put the olives in the rice. Everyone has their own special ways of cooking.

    Maizena for breakfast! You cook milk (i use soy) with some sugar and cornstarch to make a thick porridge! Cornmeal porridge is another yummy breakfast treat.

    hey, if you're ever in the mood for Brazilian food , let me know. I'm Brazilian and have been in the USA for 34 years but have been following Brazilian UA-camrs for about 3 yrs. Plus I have a niece in Brazil whom cooks mostly vegan. In Porto alegre, where I grew up, we have the first churrascaria completly vegan and she gets food from there often. You have no idea how huge this is. It's like the biggest Texas Steak House went totally vegan overnight. They make all their vegan meats and it's amazing. I'm still blown away by your encounter w/ Rebecca (vegan bodega cat). I love this girl like my own child and she actually ate at a restaurant I made the menu and trained the cooks for. It was called Petisco Vegano, in the Lower East Side. I believe you guys went to Ja Ja Ja and Orchard Grocers (some of my favorites). Love the video in NY. I lived there for 12 years in the East Village and when I had a Vegan Restaurant Upstate (Plate
    Oops, hit the wrong key. It was called Plantae and I used to buy Sweet Maresa's ( from Confectionary) macaroons for my dessert menu.     Please do one for French Polynesia or any other Polynesian islands. Some of my favourite dishes that are easy to make would palusami (I use fresh spinach leaf if I can't find taro leaf) & usually serve with rice. Haupia (coconut dessert) & roasted Ulu. (breadfruit) Also to snack on would be fresh tropical fruits. Usually Papaya, lychee, longan, sugar apple, rollina, pineapple, mango ect..

    Love it!!!! Im puertorrican and loved that you love our food. Another tradicional dish is mofongo with fried beef, that would be interesting for you to make vegan. And the original side for the sancocho here in the island is “pan sobao” that would have been nice for you to try out! Btw, looove your hair Jasmin!!!!

      Mofongo is a standard "veganised" dish actually. It is often served in plant-based restaurants.

    Lol it’s crazy because I’m Puertorican, I lived in PR all my life, and we don’t eat Quesitos as a breakfast. We eat them as a dessert and we make mini ones for parties and or festivities. You walk into a Bakery and buy this for a dessert. You guys made it really good though. Good job 👏🏻 😉

    If you add sofrito to the oil and let it stir fry for a few minutes and then add the rest… it is amazing how the flavor in the rice is top notch!
    Also after you fry the plantain put it in a bowl of salty water for a couple of second then flatten and fry again… the flavor is amazing once done!

    hi its sooo easy to make ur own veggie broth at home. save up all your amazing veggie scraps until u have a gallon bag full. if it takes awhile just keep the scraps in the freezer. when u are ready to make the broth put all the scraps in your instapot, add water to fill line and then hit the soup button, let it cook and release and voila you have ur own broth!! u can season it anyway u want. u can freeze some or store in mason jars in the fridge like I do. this way u don’t waste scraps and u don’t buy more packaging!!

    Just some suggestions: For the quesitos you can also use pineapple jam or tamarind paste if you want to stick to Caribbean flavors (but really, any flavor of jam/preserves works). And most of us add green olives to the arroz con gandules and cook it until pegao forms (think paella crust, it's the same thing). Also, I personally soak my tostones in salted, garlic water after my first fry (before I mash them). Just make sure you pat dry before the second fry. Also, we always have dipping sauce for the tostones. It'll either be mojo isleño, fresh garlic and evoo, or the very iconic mayo-ketchup. Finally, I always add avocado and red onions to my lettuce and tomato salad.

    I would LOOVE to see a korean one, pls collab with cheaplazyvegan!! I love korean food so much and just wanna share it with the world lol. I mean most of it is pretty spicy (which I absolutely love) but hopefully you can find some recipes that are more toned down lol. I guess part of the reason I love korean food so much is they know how to do spice right. it's so hard in america to find anything spicy enough for me and my bf. everything labelled "extra hot" just tastes mild to me. gochujang has a special place in my heart

    Another amazing video! Thanks for sharing. Not exactly from another part of the world, but I would love to see a day of eating New Orleans/Cajun/Creole food. Jenne Claiborne has an amazing red beans and rice recipe that I love. I'd also love to learn vegan versions of other dishes like jambalaya, gumbo, and anything ettouffe.     Next time make a mojo for the tostones: mashed garlic, salt, EVOO, and vinegar. Mix and dip. It will elevate your meals to the next level. Can also be used to marinate the vegan chicken, so good!

    I would love to see vegan Colombian food. We have sancocho too. We have another soup called ajiaco which is very yummy. Also, the corn in the soup soaks up the flavors & makes the corn extra extra on point.

    yummmm! never seen puerto rican food done in a vegan version 😍 looks good! wouldve been even better with some ajo on the tostones, mayo ketchup & some avocado 🥑
