Glad you guys are back. I’m about 24 days now without meat. Started for health reasons. Once that loosened the meat blinders it was hard to ignore the ethical reasons, especially after watching videos of factory farming (which removed them). I just wanted to be able to share this with someone without having to answer “but where will you get your protein?”.
Novice people tend to way over complicate meals when going vegan, you use your tried and true recipes you just adapt to vegan. I.e. spaghetti, instead of beef add a vegan crumble and marinara. Garlic bread just use a good vegan butter. Same with sooo many foods, if you like say roast and veggies try seitan meat ideas.
I've usually noticed the opposite actually. A lot of newbies are plantbased lifestyles in general, tend to focus on re-creating recipes they already like or buying store bought pre-made items and such, whilst people who have been going at it for a few years tend to try out new recipes and play around a bit more with ''complicated'' meals where they make everything at home. Instead of focusing on recreating that ham sandwich they always loved, they start experimenting with just any vegan sandwiches and find a delicious spread. I ended up with the best sandwich I ever had because of this, and still eat it daily for 6 months :)! I think both are fine, but to me the ''complicated'' part isn't that complicated, as usually it ends up being a meal that meat can't replicate and also opens you up to new ingredients you might've never enjoyed before/ Personally I've always been a picky eater, and I went from pescetarian to vegan around 6-8 months ago, and for the first time in my entire life I started actually enjoying meals with a lot of different mixes of ingredients in them! They are more complicated to make, but SO worth it. Also found out my love for lentils, edamame beans, tofu, bok choy, spinach and brocolli :D But ofcourse sometimes you just want something simple, my store has the most delicious vegan cheese slices for a simple sandwich, and a delicious peri peri hamburger + another mushroom burger thats also insanely good! Hopefully I can create my own perfect mushroom burger someday, but for now that will is a staple haha!

Everything looks delicious 😍 as someone from the south, I LOVE boiled peanuts. My family boils them in bulk and freezes enough to last a year 😂 But everyone I know who didn’t grow up eating them is not a fan of them unfortunately. You should try these with creole seasoning!
I. LOVE. CAJUN. BOILED. PEANUTS!! I introduced my coworker/friend to them and it became our morning tradition. We would clock in then walk to the local supplier a few times per week, lol. Unfortunately, her son has a peanut allergy and when she picked him up from the airport at the end of one Summer, she kissed him on the cheek and he had a bad reaction 😱.

Welcome back! One thing I would like to say - when you're dealing with vegan recipes using cheese, I think it's really important to specify what brands of cheese you think work. This is because vegan cheese isn't "real" cheese. All "real" cheese (in the mainstream US) comes from cows (sometimes goats) and so they all work in recipes in the same basic way --- but vegan cheeses are all made of different things and do different things and so they all have different melt-ability, e.g., unlike cheese in general. Iow, the brand or type of cheese you pick makes a huge difference in vegan recipes, which is not the case in non-vegan recipes.
Thank you! It’s probably not well known, but a majority of vegan cheese brands are made by the same manufacturer with similar ingredients and are white labeled (field roast, follow your heart, violife). It’s accurate to say that any vegan block-style cheese will work for these recipes. Most vegan cheese we’ve come across, at least recently, melts and acts the same way.

I like the idea of the nachos but have an issue with cumin. Would I just miss it out or do you have a suggestion of what else I could use instead (not spicy)
I use the exact same nacho cheese recipe I use lol they were adding the ingredients and I was like yup yup that's it and the entire nacho plate is the best way to assemble it all too. I recommend adding pinto beans to the walnut/lentil mix and just add some extra taco seasoning to account for that and it's so addicting

Do you guys have/know of a non cashew based nacho cheese sauce? I'm allergic to cashews and I've noticed that they're in a TON of vegan sauces/dips, both store bought and homemade.

I mean I guess it does if that’s how you do it lol I’m just nervous cuz I usually overcook all my vegan meat so it has a crisp and that makes me less freaked out to eat it even though I know it’s not meat anyway. I’m just weird, there’s a ton of vegan meat I won’t eat cuz it’s too realistic lol

No it cooked through! we actually tested it both ways (precooked and raw) and we found that the precooking wasn't necessary. I think since the vegan meat cooks so fast in general it wasn't an issue
I worry the vegan meat will not cook through in the dynamite lumpia. Did you have any issues with that? I trust your recipes so I don’t know why I’m questioning it ha ha. Just looking for some reassurance. My husband said we should cook the meat partially before we deep fry the peppers
i did it with 1lb impossible meat and it came out great. no need to cook it before deep frying. they are delicious btw! except i’m never sure how much salt to add, but i think i got lucky! they’re very filling too

Hi! When I run out of cashews, I've used other nuts and seeds and it's usually fine. Maybe sunflower seeds here? You could even use white beans.

I thought Daiya stopped selling the Havarti kind because I can't find it anywhere. Maybe just in my area they don't sell it anymore.
They only sell it at one store near us, but it does still exist!
