Hi Yada, I dont really know. I mean I used special sugar that also has a gelling agent in it . So if you would use honey you would have to use something else to make it solid, also honey might have an over powering taste. I guess it would be an idea just to experiment with it, make a very small amount first to see if it works. I use special Jellysugar to make jam. Its two parts fruit on one part jam. Honey and lemon is up to own taste.
