    In this video, James introduces the humble butternut squash to our menu this winter season. As well as being highly nutritious, butternut squash is an incredibly versatile vegetable, with plenty of ways to pack in some flavour to your midweek meals.
    For this recipe, James uses chicken as the main source of protein, while vegetarians and vegans can substitute chicken for beans and pulses to up the protein value.
    Don’t feel that you have to follow this recipe to the letter, to James, the beauty of cooking is about getting to know your palette, so don’t be afraid to get creative and omit or ramp up any ingredients you prefer.
    Not forgetting accompaniments, James has his stew with crusty bread, but don’t let that stop you from adding more veggies or a side salad.
