    I have been using Za'atar for so many years the traditional way on a flatbread dough mixed with olive oil. It is great to see Za'atar gains popularity in recent years and very glad to see ATK get on the Za'atar wagon. I will try this recipe for sure. Thank you for posting it.

    Love roasted butternut squash. I have Zaatar in the spice cabinet and I will add that next time.
    Because I'm very lazy, I always line my baking sheet with foil, and sometimes non-stick foil.

    Love Za'atar seasoning. A staple in my spice collection. I have people eat my roasted veggies, including carrots, that ask for some Za'atar to take home. There are many spice combinations called Za'atar but all have sumac, thyme, oregano, and cumin.
    I have to try the roasted butternut squash and customize the additions. A winner recipe for butternut squash to add to my collection.

    Zatar literally means Thyme. It’s mostly thyme with different propriety additions. Sumac is a common one, but Sumac is much more Sumac is more of a table top seasoning like salt and pepper. I’m going to try this with sumac instead- maybe also add some fresh thyme leaves too

      No, actually that's squash flying everywhere. Too bad they don't teach these people enough about not wasting so much food. They'll be learning soon enough when the shortages really start kicking into high gear. Then, they might want to start teaching people how to use every peel and scrap that they've been throwing in the trash to make good things to eat.

      @@terin1862 I think Julia meant she uses the bowls both as dog bowls and scrap bowls. So it's possible the dogs (actually just one dog now 😢) will get the squash peels, but she probably uses the same bowls for onion and garlic scraps plus a bunch of other food discard that you wouldn't feed to dogs but would compost or use to flavor stock or something.

    I have never seen butternut squash pre-peeled but left whole.

    Hey Julia, looks good. You could put your empty baking sheet in the oven on self clean and it will come out like sparkling new! Try it.

      She did not, that was a completely different recipe and it's part of the entire episode that ran on Pluto TV in I think the first season of the show. This series is fairly new and only has 2 seasons so far and it's from her home, called Julia, at home.

    Za'atar sound interesting. But, I would add one caution to those who are given to skin eruptions, like eczema.
    I'm not a physician, but I did have a dermatologist suggest that I avoid sumac. Evidently, it is in the "family," of poison-ivy/poison-oak. It wasn't a stern warning ... just a suggestion.
    But, it would be easy to look at the list of ingredients, and blend your own, omitting or adding, what you want.
    I like to blend my own Italian Herbs, because it costs less that the commercially prepared. And, I blend my on Herbs de Province, because American commercial blends add too much fennel.

      There's a *poison* sumac that's associated with poison ivy and poison oak. This is a different sumac that's apparently more closely related to cashews.

    I like my vegetable knife better for this… it has a raised line on it that prevents the vegetables from sticking to the knife.

    Buying butternut shrink wrapt is ecologically stupid and really not so much faster. I am still waiting for America's Test Kitchen to finally start thinking more about ecological solutions..
