首先多謝朱sir食譜. I have made this many times before and it turns out so good. Ever since I use the new oven, butter keeps leaking to the bottom of the chiffon mold and turned browned after baking. Anyone knows why? Please help !

昨天做了,不是很松软,不知为什么?
你好!我試做了兩次都是同樣問題發生,本來發烤得非常好,放入焗爐後幾分鐘前還在膨脹,但因我的焗爐火喉不太均勻,所以焗了幾五份鈡後轉了一下烤盤,但看著膨脹的麵包開始收縮了一些再脹不起。即沒膨脹到爆出就收縮返些少至烤盤的高度,並沒有好像你做的膨脹滿瀉的現象。請問是什麼時候原因呢?

發唔起原因有好多架喎!例如酵母是否失效無活性了?或者搓粉時酵母同鹽齊放一起令酵母死亡等等~

肥嫲嫲肥嫲嫲 酵母活性無問題?只係做呢款包先發唔起?如果唔確定,先試試用少量溫水、砂糖、幾克酵母攪拌混合,等十五至二十分鐘,觀察下液體中是否有出現泡沫,有泡沫代表酵母有效仲有活性,泡沫越多活性越強~
