Hi, I'm on one of the design teams(Waterloo's solar car team that was here). Solar car teams will use something called maximum power point trackers to control the voltage boost ratio to ensure that we're always running on the maximum power ouput of the panel at any given time.
To add to the other response, I actually designed the array for this car, and it takes a lot of careful design work to figure out what the optimal wiring configuration is to avoid these mismatched lighting patterns as much as possible
Also to add to the other responses, I know SunCat Solar! They make some pretty amazing solar panels for "specialty" applications like race cars and stratospheric balloons.
