The garam masala Latif refers to are the whole aromatics on the plate immediately after. The garam masala powder many people are familiar with are a grounded powder combination of what he shows us. Hope that helps.

Latif, Looks great. Just having a sit down preparing everybody's dinner. Chinese and USA tonight. I've butchered two chickens and removed the breasts and legs. The legs get done in onions and a barbecue sauce, I make from scratch, in the oven. I cube and velvet the breasts and cook with Wing Yip curry sauce and bell pepers. Basmati rice for both. You were my inspiring break! I could imagine the taste developing as you cooked! I really ejoyed the videos you posted of your visit back home and am glad you are recharged. It put into perspective for me good people living a simple life. It also illustrated a position I found myself in with my Indian and Pakistani friends in Rugby over 20 years ago. They had few photos to describe their past/ roots and I suppose now, from a distance, "I get it." Needless to say I enjoy all your stuff and my neighbours here in the Scottish Borders can only wonder about the aromas that permeate the street from my extractor when I'm "Doing an Indian/ English, Bangladeshi Restaurant Style Saturday night"! Just cooked this for my family and it looks really amazing, smells great can't wait to try and see what everyone else in the family thinks of it, I did minus the shatkora as I wanted to taste the original flavour of the curry. Thanks for the recipe
Love the ketchup. I normally use tomatoes or puree and put ketchup in last to temper. I will put it is earlier and really bring those onions to bhuna. Nice and hot and sweet and shatkora citrus!

As a side note, I googled what I thought I heard was Shakora/sakora and came up with some singer I have no idea of and an anime character.. Read the recipe!! Found it at my local world deli. Yay! Love it.

Try and see what you prefer. You can't go wrong with Tilda though it's usually the more premium brand. Also use a rice cooker if you can't cook it on the hob. Although rice is tastier and healthier cooked in a pot of water and reduced on the hob (less starch), it's totally fool proof and acceptable to cook in a rice cooker.

Made this. It was amazing. The flavour is very different. The grated onion made a totally different flavour than adding the usual tomato paste. There was a lot more flavour coming out of those spices too. This going on the favourites list because I wasn't the only one who liked it 😃👍
Shatkora. It’s a citrus type of fruit grown in Bangladesh. You can find it in bengali cash and carry stores usually the frozen packs. It’s got this delicious tangy taste to it, like grapefruit has, looks like a mouldy lemon, but a sour bitter flavour, and traditionally used in beef curries, or any meat. So so yummy. An absolute Bangladeshi traditional must try 🤤

Could you tell me what type of pans that you use and recommend for cooking curries? … I was using a nonstick sauté pan, but have read bad reports about the toxic qualities of these pans using on high heat! so should I go for a good stainless steel pan or a cast-iron pan… The one that you are using in this recipe looks like a cast iron pan I guess? I’m looking forward to your advice and we’re hoping to visit your restaurant soon as we live in Stoke.😊

Definitely gonna try this over the Xmas , and then I'll make it again before new year but with a twist, I'm gonna add either a heaped teaspoon of either Mr Naga chilli pickle or Mr Vikki's king Naga chilli pickle the last 2 mins of cooking time, I can imagine it will be wonderful.. this dish looks absolutely tasty by the way and I can't wait to try it and try it again with a Naga chilli pickle twist haha..

We bengalis generally either Tilda Basmati or Tolly Boy

Shatkora isn’t required if it’s not available.
Just add a squeeze of lemon and some grated lemon rind for a similar citrus kick.
why do you add the ginger/garlic later, rather than as the first thing after spices?
Looks great, you can get Panch Phoran mix in Tesco
Asda and Sainsbury’s too but the bottle size is tiny for Asians
