Ah yes the classic "slap a shit ton of raw bacon on something" recipe that always goes so well. Turned out exactly as expected. Honestly the first two are just kinda boring as far as actual effect of what you end up with is while the last one is raw bacon and cheese product.

I would cut the bacon to have only ONE layer instead of those multiples. That way, if you cook it until the internal temp of like 160, the bacon will be cooked, albeit floppy floppy.
I really wish you'd try to make an edible version of the last dish. Pre-cook the bacon as far as you can and still have it pliable enough to wrap around the cheese. And then do your long & low deep fry. It's fine to recreate these dishes as presented, but I think you really could offer something special with showing how to make them actually edible. So many underperforming recipes you've tested could benefit from this, and I suspect most of us would really enjoy that content.
The cheese bacon doughnut would be a lot better if it was thinner, and the bacon mas not raw. I mean, maybe bake it a little before to get some browning but not so much that it gets stiff. Also, not in a doughnut shape. And not breaded. ANYWAYS

That being said the bacon looked like it was probably cooked though just still floppy, which yeah, not a fan. I don’t think bacon will get crispy if you batter it without cooking first because you have that wet layer over it?

The uncooked bacon was really gross to me and is a major flaw in the recipe (not that it's one I would try, anyway, as I have a kid who would probably eat the whole "donut" completely on his own).

I hate chewy bacon as well; if it's not crispy it's not bacon, in my humble opinion. I'd sooner eat vegan rice paper bacon over chewy, barely done bacon
The pickles are not original to him it is an old southern recipe. I think I have seen it with 7up or bubble-up, Also Ewwww the cheese is not even melted.
