That 'mosaic' sushi is based on Chef Morimoto's stained glass sushi, he did it on an episode of Iron Chef a long time ago. It's popped up on the internet a few times in different variations. The original doesn't use food coloring & has a more elaborate design with the fish in the middle but this version it still impressive. The sushi pizza looked great but definitely a bit hard to eat
Also, you could just use spirulina powder instead of food colouring and since it’s an algae just like seaweed, nothing weird about it!

There's actually a "sushi pizza" in Canada, it's basically a deep fried puck of rice covered in panko that's usually topped with cucumber, fish or avocado. It's still a bastardization of sushi but it's pretty functional and tasty

Bro tip! Wash the rice in a separate bowl, then add the washed rice to the rice cooker. Washing the rice in the bowl of the cooker can cause scratches in the non-stick lining over time, making it not last as long. Washing in a separate bowl is more work, but it's better in the long run.

I actually had a friend from Thailand that would bring me these snack bags of tempura battered seaweed. I don’t remember if they were made in Thailand and assume they are a modern snack. But they were obviously delicious. Fried crispy battered salty seaweed.
Funnily enough, Sushi Pizza is actually something that exists in Toronto! It's made by frying rice until it becomes like a crispy rice cracker then piled with raw fish, avocado, and drizzled with spicy mayo. Not for me, but I'm sure Sushi lovers would enjoy it!
Depends on your definition of sushi lover. I really can't say this without sounding pretentious, but I enjoy the flavors of the fish without drowning it in spicy mayo. It ruins the purpose of eating raw fish in the first place since the flavors of the fish are so nuanced. You'll never see a sushi-ya in Japan actually serve that condiment. Haha, like I said, I know it sounds pretentious but I really can't say all of that without sounding like it.

So sushi pizza practicality is a 1 but apparently taste wise a ten? sound yummy to me.

Wave in Mt. Dora has amazing sushi! They do all kinds of creations including a sushi hamburger, hotdog, and taco along with the pizza and crunchwrap seen in this video. The pizza slice sushi is incredible and their rolls and other food is really good! Check them out if you're ever in the area. My parents live in the area so I go a few times a year to try their new creations.

I hope this isn't an odd question, but where did you find the roe? There's only one place near where I live (a Wegmans) that's bougie enough to have something like that and I've never seen it there. I only get there about twice a year, but in new/not often visited stores I tend to like checking things out for the hell of it, and I've definitely never seen it anywhere.
It's not really important, but I'm pretty sure my mom would eat half of that in one sitting, so I'm considering holiday options.

Don't know if someone had said this but for the blue rice of the moisaic sushi you could use the butterfly pea flower instead of blue food dye. The butterfly pea also doesn't have much taste so it won't affect the sushi rice.
TBH the first one seems like a good way to add unusual colors to plain white food. Not many natural stuff, apart from Blueberries, is blue, so it's interesting to say the least.

If you use spirulina powder any other seasoning that has distinct color like tumeric instead of food dye you make the mosaic sushi even better.

The nori is slippery so it needs the extra work to seal it up for frying. Maybe egg, flour, batter style?

honestly, the thing with some of these recipes is that regular sushi is a. infinitely easier and faster to make. and b. tastes quite literally the exact same
