Homemade Adjarian khachapuri | Georgian cheese boat

  • Hey! Today we will cook Adjarian khachapuris.
    Ingredients (for 3 servings):
    250 g of grated suluguni.
    220 g of flour.
    125 ml of warm water.
    30 g of olive oil.
    7 g of yeast.
    4 eggs.
    7 g of salt.
    7 g of sugar.
    Mix yeast and sugar in warm water, cover with film and set aside for 10 min.
    Sift flour, add salt and our yeast mix.
    Stir and add olive oil, knead the dough.
    Cover with film and set aside for 50-60 min.
    Divide the dough into 3 parts, roll into an oval shape.
    Place 70-80 g of grated cheese.
    Pinch the dough thoroughly - there should be no holes!
    Place them back side up on a baking sheet.
    Make cuts in the middle of khachapuri, use your hands to form a boat shape.
    Brush the dough with egg.
    Bake in the “top-bottom” mode at 220°C (425°F) for 10-12 min.
    Take out khachapuris, spread the cheese a little with a fork.
    Place the yolks and return in the oven for another 1-2 min.
    Ready!
