I MADE THE COZY POTATO SPINACH SOUP FOR DINNER TONIGHT AND FOLLOWED THE RECIPE EXACTLY. WE TOPPED IT OFF ONCE SERVED WITH SRIRACHA FOR A LITTLE SPICE. IT WAS SO GOOD. I WAS NERVOUS ABOUT USING THE CASHEWS BUT IT ADDED SUCH AN AMAZING CREAMINESS TO THE SOUP AND IT WAS SO SIMPLE TO MAKE WITH THE MISO PASTE. I WILL DEFINITELY MAKE THIS SOUP AGAIN. I MADE THE STOVE TOP VERSION AND THE VEGETABLES WERE ALL COOKED PERFECTLY. YUM!
I love both .. I try to alternate between red and creamy . I have TMJ and can’t eat salads. Having these soups are always great way to eat healthy .. I have to say my husband likes your recipes the best when I cook them .. thank you so much .. much love ❤️
Been making a pot of soup once a week lately, keeps me fed for 4 or 5 days. I love minestrone with a splash of balsamic vinegar. You can more or less substitute chickpeas for the kidney beans and nutritional yeast and spices in place of the tomatoes in the minestrone recipe to make a vegan "chicken" soup
I just made the potato spinach with a few tweeks, added a tablespoon of hot sauce before cooking and used soy milk instead of cashews (nut allergies), came out perfect.
@@FABIOof119 nut milk isn't toxic, and most people looking for a substitute have a milk allergy or a lactose intolerance, which is why they look need a replacement. Why are you triggered by someone wanting a substitute to milk?
Fun Fact about cooked spinach: "Cooking increases the vitamins A and E, protein, fiber, zinc, thiamin, calcium, and iron - as well, important carotenoids, such as beta-carotene, lutein, and zeaxanthin, also become more absorbable when spinach is cooked" according to The Vegetarian Times

Since Parmesan cheese isn’t vegan (cows) I’ve heard a tasty sub is cashews in a food processor to crumble (or maybe a VitaMix then Nooch. (Nutritional yeast. It was 1 cup cashews, 1-2 tbsp nooch. Can freeze for a month or store in frig a few weeks. Don’t grind cashews until they become butter, Just until they get crumbly. Just learned, will try tomorrow. Fingers crossed 🤞🏼.. thanks so much for this awesome 👏🏼 video! You’re the best !
1) Don't cover your steam release! Don't do that! Specifically mentioned in the safety guidelines to not do that. 2) Don't quick release soup! You could probably cook for 1 minute and then let the pressure release on its own for about 10. Then release the remaining pressure. That's how you do this safely and reduce cleanup.
I didn't have vegetable broth, but this video made me want to make this crazy potatoes soup now so I used vegetable bouillon, but it turned out really good and I had 2 bowls of it. So yum. Thank you.

I probably lean more towards creamy soups, but I grew up with tomato based so this one made me nostalgic. I would love more instant pot recipies! I’ve had mine for two years and have sparingly used it. I’m always looking for non soup vegan and vegetarian recipies to make in mine.

YUM! Gonna make the potato soup tonite! I have the IP Mini, tho. So will halve the ingredients, but use same cook times. I don't have any miso and am soy free. So I am gonna just take some cooked soup and place in blender to cream up then return it back to the soup.

I love cream soup but I haven't been eating them since I'm doing low fat. But I saw Oatly had a low fat version of their milk which doesn't have any oil so I might try making some now. :)
@@Dancetothebeet I'm cutting out almost all fats. The only fats I really eat right now are ground flax seed and a sprinkling of sunflower seeds with my oatmeal. Everything else is fat free. I'm doing it that way because I'm trying to lose weight. I've lost 28 pounds so far. I still have a ways to go but I'm making good progress when I stick to my plan. My friends are terrible at tempting me. lol

You've got this! 💪 Just make sure you are getting enough healthy fats in your diet from seeds avocados, olives, coconut, fish, etc. It's so crucial for your brain, hormones and reproductive health. Also a quick tip I've seen with my clients is that cutting out added sugars and processed carbohydrates (and choosing whole foods) gives the best weight Loss results over cutting out fats (def don't need fried foods, veg oil or animal fats though). Fat doesn't turn to fat in your body but excess carbohydrates and sugar does. Just some food for thought! Do what works for you though and just listen to your body and what it needs. 💛😊
@@Dancetothebeet Low fat is definitely the way to go for me. I feel great and I need to eat low on the calorie density scale if I want to lose weight. I'm a 4'7" female in my mid 30's. I can't just eat a bunch of calories. I gain weight VERY easily. I'm keeping low fat WFPB until I get to my target and then I'll evaluate if I want to lose more weight. I have 17 pounds left to target, which I honestly never actually thought I had a chance of reaching when I first started. lol. Once I'm at target then I'll just have to play around with my diet to see what maintenance is.
A few months ago she made a video about this, not wanting to police herself as much and stressing out about eating only healthy food. Since then she's compromised more and more with her recipes. It's hard to stay healthy!

White soup looks so plain, but it is very deeeeeeelicious... my kids love that.

I made the creamy potato recipe ..used zucchini instead of celery Nd coconut milk as substitute for the nut paste ..it was amazing

Absolutely delicious, made the potato spinach soup cooked with my Dutch oven so took a little longer about 25 minutes for the veggies to soften! 👍🏻👍🏻

Yum bWhat is miso paste and where would it be located in the grocery store?
it's made from fermented soy! It's usually near the tofu, it comes in either a tub or bag :)
It adds a salty-umami flavor without animal products
FYI, if you want/need to avoid SOY, they do make a soy-free chickpea-based miso.

How much water did you put? I tried this and I turned very creamy I think the tomato paste plus diced tomatoes made it very thick

I've used coconut cream as a base for a lot of creamy sauces and it is delish 👌
It would work, but I prefer cashews because coconut has a stronger flavor to me
