I just realized why I love this guy so much. All the shorts creators are always so pretentious, with their claw cutting, chopstick stirring, asmr sound mixing and always perfect ingredients that makes cooking seem way harder than it really is.
futurecanoe (and other cooking channels I ACTUALLY watch) show how to cook for yourself, follow recipes and nook like a normal person. This makes it so much more approachable and inspiring

I mean, it's sometimes fun to watch, but I check my phone every time he calls himself "papa" or something like that.
Adam, I can stand, just because of how nerdy he is, and I genuinely learn a lot from the science parts and most of his advice is good and applicable, but his ad spots are horrendous.
Babbish is cool to watch every so often, but I can't binge him, like I can binge Futurecanoe. (what was that about blending kosher salt? I need to see that one)

Then, there's people like Guga, where it's just content. not bad, some great, but mostly mid. I enjoy the chemistry of the three when they all get together and try the latest experiment.

There is definitely a place for people with precise recipes and instructions. But cutting your veggies like a professionnal chef, using a specialized machine, and taking all the time in the world to ferment your own bread just comes off as pretentious and disingenuous ('cos ain't nobody got time for all that!).
Only showing "perfect" and "try hard" recipes just makes cooking less approachable and while it isn't the only factor, it definitely contributes to making people eat less healthy.
For example, I love cooking. It's a nice way to spend my time. I go to the store, get the cheapest meat (that's often in the "expires tomorrow" bin) and figure something out.
And then, I eat that for the rest of the week.
I _know_ how to make bread: I once made my own raviolis (or pelmenis) and had too much dough at the end. I added milk and yeast and made my own bread.
But if I have some important guests that I want to impress with a nice meal, and I chose to make gourmet burgers; I buy the best bread from my baker and focus on making the meat perfect. The baker will make sure to make perfect bread.
How many videos have I seen, where brioche bread is made as a 5 minute side quest? Are you effing serious?

Joe’s Ginger has no relation to Joe’s Shanghai and it is the lesser of the two. I learned that lesson the hard way. If you want the real deal, go to Joe’s Shanghai next time for the xiaolongbao.
Also, Wah Fung No. 1 is worth the hype! When I lived in Chinatown 15 years ago it only cost $2.50 for a portion that lasted two meals. Hope their gas gets turned back on soon!
Joe’s Ginger is the lesser Cantonese spin-off of Joe’s Shanghai when they were down the block from each other on Pell Street. They had the same owner, the eponymous Joe Si. I never noticed a difference between the XLB between the two, and the Joe’s that used to be in Elmhurst was where I first had XLB when my uncle took me there as a a clueless teenager and now it’s where I compare all other XLB to. Joe’s tends to be more fatty than other XLB I’ve tried, with a meatier broth, and I’ve noticed the same at Joe’s Ginger. RIP their original Flushing location, another casualty of the pandemic; used to go there all the time when I visited my parents in Flushing.
Nowadays the relation is not acknowledged by Joe’s Shanghai, and the drift has gotten more pronounced after Joe’s Shanghai moved to their new location on Bowery. Also, the waitstaff is not the best, but I’m not there for the staff and the food is still decent, if more expensive now.
I prefer Joe’s Mama
'Tasty Dumpling' and 'The Little One' looked like the only ones I'd be interested in.
My fav Chinese restaurants usually have the word 'dragon' in their name, and I like when the cashiers have a heavy accent and yell orders. Even when the place isn't busy.

The pork buns at Mei Lai Wah are crazy good! If you're in NY you have to come here to try them. I would suggest the BBQ pork/shrimp noodle role also. Soooo good. Wah Fung is a must also...when it finally reopens.

The cantonese lady sitting across you is talking in Mandarin. "Wu bo hui yao ni la" = I don't bite you. Meaning "Don't worry, I won't bite." Not sure if they said anymore than that because the audio cut away there.

Anyways, good journey's. Always a great vibe watching your channel, just a different style in this one, i agree with continuing both paths for more content for more people. Just don't stop either, or that could be a bad idea. Continue the good work and expect to see substantial growth soon.(assumption) How soon, that is all dependant on how many paths of content you follow. So the more ideas, with multiple versions of your content, but keeping the old. That's important man. Take every path you think is right, and grow from those.
