- How to recipe for Rigatoni Alla Vodka. Vodka sauce was very popular in the early 90's, but it's still a family favorite of ours, and what's great about this pasta dish is how simple the recipe truly is. It was one of the first dishes I learned to make in the first place I ever worked.

Rigatoni Alla Vodka Ingredients:
-1 pound rigatoni
-3/4 cup pecorino
-1 small onion
-3 cloves garlic
-3 Tbsp olive oil
-6 ounces tomato paste
-1.5 cups heavy cream
-4 oz. vodka
-4 oz. dry white wine
-1 tsp crushed red pepper
-1 cup reserved pasta water

His dishes are well focused. Other UA-camrs make these “sloppy” versions with unnecessary ingredients. Italian food is easy but there should be a sense of focus like good Japanese food.

Did I miss him adding the vodka? All I saw was wine being added.
Him is Jim. Hi! I show the vodka at 40 seconds and did not mention it but they were both added at the 3: 15 mark. Forgive me but this was the 2nd video I ever published. The ingredients are in the recipe card also. Hope this helps.

Made this last night for my cheat day meal. It was awesome. It's my favorite pasta dish now. Easy to make, doesn't take long and it has an amazing flavor. The wine really adds something to the flavor.

I made vodka sauce like this not long ago (not quite your recipe, but close). Having made it with tomatoes in the past, I realized what I'd been missing. Much superior to do it with paste.

My favorite pasta dish. I usually make a lot so I usually put my pasta in a separate pan and then pour the sauce in. I'm just looking to see what everyone else does because I want mine to come out just as good. I usually add basil to mine as well.
Can't go wrong with basil. When I make a lot of sauce I often do sauce later. The advantage to finishing the al dente pasta in the pan is that it helps the sauce stick. Cooking for 30-60 seconds helps it cling better to the pasta and avoid the sliding off aspect.
You have nerves of steel, man. That cream sauce looked like it would break any second.
Anyway, success makes you right, and considering that I just cooked this recipe and it turned out amazing is what I'll call a big success. Perfect pantry dish. Apart from vodka I have all of those ingredients always at hand, so I think I'll cook this a few times from now on. Thanks for the great inspiration!

The wine makes all the difference! My Bronx bomber has had a lot of vodka pasta sauces in his day and he says this is one of the best. It just doesn't taste like straight vodka!

I'm sorry but I have a question for you I've watched this video a couple of times but when did you add the vodka? I saw the wine and the cream added. Are you subbing the wine for the vodka? That part really isn't clear to me. Thanks

I didn't have Vodka and heavy cream so I used Hennesy Black Cognac and plain yogurt 😁 The result was pretty tasty to me 😁

You definitely can. Vodka doesn't have much flavor, so the sauce will have almost the same taste.

I haven't tried asparagus. Give it a shot and see if you like it. We do occasionally add baby spinach to it right at the end and toss before serving. Thanks for the sub!

Love your stuff, but I rewound this like 4 times and didn't see where the vodka went in. I saw the wine, but that was it. I get it though. Never saw the vodka.
Add the vodka at the same time as the wine.
So...I'm going to be totally honest. I have made many of your other recipes which were all home runs, but...I didn't love this. It tasted entirely like tomato paste, even though I followed the recipe to the letter. Maybe I just don't like the taste of tomato paste? Like I said, everything else: home run.

I am pretty sure that is what he did, yes. Added them both at the same time.
Have you ever tried this with a can of San marzano tomatoes and reducing them down to a paste consistency? It takes a little while longer but amplifies the flavor immensely.

@@user-ld5mk9tp7b It's for a pound of pasta. I think I halved the ingredients in this video. The printable recipe has 4 ounces vodka and 4 ounces wine for a pound of pasta.

I think I forgot. But the recipe does indeed use 1/2 cup vodka and a 1/2 cup dry white wine. It is linked in the description.
