    You gotta have scotch bonnets, habs dont have the same resin-y flavor and sweet/tarty flavor as scotch bonnets do in regular jamaican recipes from the island.

      Guessing they went with the Habaneros as in most of the US they're more common than the Scotch bonnets.

    Learned from Jamaicans jerk meats are traditionally smoked over allspice wood also called pimento wood, not charcoal. You want the flavor of allspice not just from the berries in the marinade; you want it in the smoke.

    I am jamaican and I endosed this recipe yummy habeneros can work they are flavorful just like scotch bonnet I use them inplace of scotchies all the time still taste yummy

      I tend to stay away from the comments in videos like this because of all the "that's not authentic...use blah-de-blah to make it authentic" know-it-alls putting in their two bits. So annoying.

    Fresh ginger and replace the cinnamon with fresh nutmeg,add fresh grd. black pepper, lime zest & juice.These will improve this recipe.

      Exactly. And they should crush the allspice before putting in the blender. A little less soy and add a little water to help it penetrate more and allow for basting, not just at the end.

    Ya you want to remove the seeds from the habanero, you could then use 3 habaneros, far more flavor same heat level

      Walkerswood ALL THE WAY, best jerk sauce I've ever tried, and I've tried ALOT of them!. Made in Jamaica, pretty sure they know how to make a good jerk sauce :)

      @@mikewoodson6930 Depends on where you live, sometimes it can be a little hard to find (just Google for your area). A couple of years back the company restructured and for a while it was difficult to find it, but now it's all good, thankfully!.

      I'm going to try it with boneless, skinless chicken breast. That's the only part of the chicken that I like.
      It should be fine.

    I have never made Jerk chicken from scratch, but anyone attempting to make this recipe PLEASE use scotch bonnet peppers. The flavor is no where near the flavor of the habañero.

      @@22maestro Yes I definitely understand that, however, they should have stated the preferred pepper. Habañero is good, but if you are fortunate to find scotch bonnet, it is the better pepper to use for Jerk sauces and other West Indian dishes for a more authentic flavor.

    I like the recipes, but the exaggerated, "WOWS or MMMMM'S" are a bit much from the experienced host(s). Both of them. You know which one's I'm speaking of.
