Learned from Jamaicans jerk meats are traditionally smoked over allspice wood also called pimento wood, not charcoal. You want the flavor of allspice not just from the berries in the marinade; you want it in the smoke.
I am jamaican and I endosed this recipe yummy habeneros can work they are flavorful just like scotch bonnet I use them inplace of scotchies all the time still taste yummy
You gotta have scotch bonnets, habs dont have the same resin-y flavor and sweet/tarty flavor as scotch bonnets do in regular jamaican recipes from the island.
For anyone wondering, this is a truncated version of the full video. Here's the full video that provides some context for the word 'jerk' and the origins of the dish in Jamaica. Starts at the 18 second mark: ua-cam.com/video/_UqpgZ5Zkyg/v-deo.html
I will certainly be making this this week! However being between grills (just had to get rid of the old one and have not get chosen the new one) I'll be doing an oven version.
I tend to stay away from the comments in videos like this because of all the "that's not authentic...use blah-de-blah to make it authentic" know-it-alls putting in their two bits. So annoying.
@@desrtangl But yet you read and commented. Okay...I commented for people to get a better flavor. If habañero is your choice. Cool. No biggie. Continue to be annoyed.
Exactly. And they should crush the allspice before putting in the blender. A little less soy and add a little water to help it penetrate more and allow for basting, not just at the end.
Walkerswood ALL THE WAY, best jerk sauce I've ever tried, and I've tried ALOT of them!. Made in Jamaica, pretty sure they know how to make a good jerk sauce :)
@@mikewoodson6930 Depends on where you live, sometimes it can be a little hard to find (just Google for your area). A couple of years back the company restructured and for a while it was difficult to find it, but now it's all good, thankfully!.
I have never made Jerk chicken from scratch, but anyone attempting to make this recipe PLEASE use scotch bonnet peppers. The flavor is no where near the flavor of the habañero.
@@22maestro Yes I definitely understand that, however, they should have stated the preferred pepper. Habañero is good, but if you are fortunate to find scotch bonnet, it is the better pepper to use for Jerk sauces and other West Indian dishes for a more authentic flavor.

Guessing they went with the Habaneros as in most of the US they're more common than the Scotch bonnets.
**laughs in Carolina Reaper**
Kinda hard to find scotch bonnets in a lot of parts of the US.

Fresh ginger and replace the cinnamon with fresh nutmeg, add fresh grd. black pepper, lime zest & juice. These will improve this recipe.

-Habañero- Habanero
Looks yummy. I'm partial to Walkerswood jerk marinade, how close is this to that flavor?

@@wwlittlejOfficial thanks, I just found it at Publix grocery store which is about 3 miles from our home. Thank you!
@@mikewoodson6930 glad ya found it, 2 tablespoons per pound of chicken, let it soak for 12-24 hours.
Ya you want to remove the seeds from the habanero, you could then use 3 habaneros, far more flavor same heat level
Perfect way to hide the scallions from my other half! Looks great! too!
"One or two habaneros?"
~Thinking that sometimes just the *ginger* is too hot...~ 😥
😋😅😅😅 "you jerk master" .
I was hoping someone else caught it🤣
I can make this with boneless thighs and boneless chicken breast?
I'm going to try it with boneless, skinless chicken breast. That's the only part of the chicken that I like.
It should be fine.
Love jerk chicken.
Like it.

Great recipe but ground pimento is a staple ingredient for jerk. No pimento, not jerk. Jamaican rule!!
Steve Martin approved
Repeat after me - ah-bah-NARROW. "h" is silent, regular "n", no tilde.
Wrong!
It’s not jerk chicken without scotch bonnets
looking for video of black man making this
Nothing to do with race these people are great cooks they really studie each dish

Wow! No mention of Jamaica?! Talk about cultural appropriation. The recipe is okay at best. Try getting a Jamaican to show you properly!

Cultural appropriation is not new. Civilizations have been doing throughout the existence of humanity. There is nothing wrong with it.
