You should add butter to your ganache your get a nicer shine on your chocolate.!!
I’m so sad, my cake turned out really poorly :( it was VERY sticky and moist on the parchment paper when I tried to roll it out to put the spread on. I didn’t use any cooking spray either. What can I do next time to fix this? I really find Yule logs special but I’ve never been able to do one :(

Could i soak the sponge with amaretto? Or will it destroy it?

Yes, cream cheese would be fine. I haven’t tried using buttercream before with this recipe.

How far in advance can you make it? I don’t want the inside filling to soften up and leak
The filling won't soften up with the mascarpone and powdered sugar in it. It'll be stable forever, basically.
If you would have greased your parchment paper it would not have left some sponge on it
Should I bake with convection fan on or it doesn't matter?
I have a convection oven but when I bake I just use bake mode, not convection mode. Hope that helps!
where can I buy the candied cranberry ?
If you visit the recipe on her website, she actually gives you instructions on how to make them. It just uses a sugar water technique on fresh cranberries and rosemary!
Unfortunately, you can’t buy them. You make them by coating them in simple syrup and rolling them in granulated sugar.
