My favorite Summer meal to cook I learned from a seventy year old Vegas chef while camping in the parking lot of a ski resort for a mountain bike race back in the 90's. Whole deboned trout stuffed with garlic and parsley, fried in butter. The old guy did all seven events at the race on one bike. We were just there for the downhill. Legendary. I've since started to add minced apple. For New Years 2000 I gave this treatment to a whole salmon with nectarine instead of apple and a nice row of raspberries inside along the spine. Go Cook!
I've been braising lots of meat recently in butter and that sauce you made with it looks awesome Matty. I'm gonna use mine to make a version of it, thanks for the inspiration!
I smoked ribs a few days ago, yesterday I grilled some wagyu burgers, today I'm just tossing some cheddar brats and Italian sausages on the grill. It's a good summer.
Did a twice cooked pork belly with summer veg and scape jam last month, garnished up with some shrimp salt lotus root chips I did from scratch and a citrus sauce. It was pretty tight.
Big fan and big plans for makin' my own thing after rocking so many of Matty's recepies with a coffee rub rib and eggs breakfast for the guys at our first post pan. get together ... an inspiration that never quits !

We finally get to see Matty as the true Master Chef that he is. This is not 'Home Style Cookery', or 'Just A Dash', or even Matty making burgers and ribs - this is full blown Pro-Level grade food. I bet Master Rang is proud of Matty making this dish.
Did the cout de boeuf recipe. Failed the first time, though the flavor was there just over cooked. Success the second time around. Instead of getting the thick steak like in the video, i did multiple t bones and ny strips at once. The guests loved it. Thanks Matt

matty last year I made a dish just like this but i did bacon wrapped shrimp and I got horseradish aioli for the steak sauce and For greens I did asparagus
Slapped a couple tri tips in the smoker for 5 hours, seasoned how I do. Chopped up veggies for a little custom slaw dawg, made my own bbq sauce and smashed smoked TRI tip Sandies!
