(although I still need some practice :)) Just one question, if the fondant is dry on the top edges of the cake, what is wrong? Was the fondant stretched too much over the side? And how can I prevent it from happening?
Louisa Joubert It's just a speed thing, and will get less and less with time. Also, colours do it more often than white. I just rub a lot on the edges if that's the case prior to sharpening. Light pressure, but it does help. xo

would you recommend delivering a cake with a spacer in like your cake or adding the last tier at the location?
+Valerie Morales Most of the time I set out the top tier with a spacer, or just anything over 3 tiers.
