Oh I love this idea...I never really worked with buttercream as a cake cover (I use fondant mostly) but these tutorials of yours make me soooo excited to try these. It's actually great, because I find even if people love the look of a fondant cake, they don't really like to eat it. I hate to see the fondant I kneeded, rolled and smoothed with care being thrown away cause people pick it off the cake :D

About using fresh flowers, how do you make sure the flower itself doesn't "contaminate" your cake? (i.e. pesticides, bugs or other things that may have been on them at some time)
joyfuljaj Knowing your supplier, Darlene gets them straight from the grower, stick with safe non toxic flowers, roses are edible after all, well, when grown for it. Also, using the flower viles to make sure the stems don't go in the cake.

Hi, love this tutorial.. thank you so much. Just a general question about buttercream though as I have never used it for decorating a cake. Do buttercream covered cakes have to be refrigerated all the time.. or can they be left out like fondant covered cakes (which is what i am used to making)? I am going to make my daughters engagement cake and she wants the rustic messy look with sugar flowers. So if I put the cake in the fridge I am scared the sugar flowers be ruined and if I leave the cake out I am scared the buttercream will melt. I would love your advice. Also I have never seen any one cover a cake with royal icing mixture, could I use this over a buttercream crumb coat? thanks so much for your help, Maryann
Maryann Delicata Hi, You don't have to keep it in the fridge if the room temp is cool, or air conditioned around the clock. If you ened to place it in the fridge, don't attach the flowers. I always attach flowers at the venue anyway, as driving a cake with flowers down our streets would not end well lol. Some people use royal icing, but I can't say i've tried. Best of luck. I remember watching one that was excellent where you trimmed down the sides of the cake (I think you talked about how that made the cake when sliced look very uniform). How do you get the bottom colour. Love it. Brown goes pink/skin colour before you get the brown. Ivory americolour get's almost to this colour but it's not strong enough to get this dark????
Cakes Cupcakes Yes, they are fine. Coming from a florist, it is safe to use. But there are some flowers that are poisonous, so if you are worried, you can look it up online.

Marie Gonzales-Molina Just a few hours, maybe up to 8 hours, depends on the type of flower though. Lillies, an hour or two only. Roses last a while.
