How to Make 29 Handmade Pasta Shapes With 4 Types of Dough | Handcrafted | Bon Appétit

  • In this episode of Handcrafted (fka Beautiful Butchery), the Pastaio of Eataly Flatiron, Luca D'Onofrio, shows Bon Appétit how to turn four types of pasta dough -- egg pasta dough, spinach pasta dough, cuttlefish squid ink pasta dough, and semolina pasta dough -- into beautiful, handmade pasta shapes.
    Semolina pasta is a southern Italy specialty. From that dough, Luca makes cavatelli, malloreddus, lorighittas, cencioni, capunti, strascinati, culurgionis, and sagne incannulate. From the egg dough, D'Onofrio makes fusilli al ferretto, tagliatelle, tortellini, farfalle, garganelli, anolini, cappelletti, tagliolini, agnolotti, sacchetti. From the spinach dough, Luca makes foglie d'ulivo, trofie, fagiolini, and pappardelle. From the cuttlefish squid ink pasta dough, D'Onofrio makes orecchiette, strichetti, fettuccine, and corzetti.

      I tried making malloreddus and it came out pretty well, but the fusilli al ferretto was WAY harder than he makes it seem. It took me like an hour just to make a handful.

      There's a coffee-table book that's an encyclopedia of pasta. It used to be my bible, but it drowned in the great flood. I haven't replaced it...yet.

      Usually we learn just a couple of shapes, those that are popular nearby our homeplace. Italy has many different cultures inside, a proof is the existence of all that kinds of pasta... I'm Italian and I've never heard about many of those shapes in the video. Fine 😅

    Pasta is so primitive a food yet it is astounding to see these hand made methods in modern times. I love all Italian foods and deserts.     So beautiful! Why are Italians so creative with pasta? It must take a good memory to remember the names, let alone what sauce goes with what pasta. So much to learn... I have made beef & chianti; spinach & ricotta and chicken & chorizo filled pasta this year. It is so practical to put in freezer in bags, then take out as much as needed for a quick meal when busy.

      Video captivated my undivided attention. It is well made with good clear commentary. What would have been great is more clear info of the dough making with ingredients & storage plus clear precise info on immediate usage of fresh pasta & storage / freezing. Not everyone has so many pasta tools so info of what alternative tools can one use &/or info of where one can buy them.

      I made pasta dough with barbabietola / beetroot recently. A small amount of powdered turmeric helps change the pink to red. I haven't tried to make anolini though.

      They don't just butcher the Italian names, most of them are not even cooking Italian recipes. Everytime you see them mixing onions and garlic together, or using extreme quantities and numbers of spices and herbs, I assure you, that's not Italian cuisine. Beware of impostors, there are very few UA-cam channels actually being faithful to Italian cuisine.
      This guy has lost his Italian accent a lot of time ago, but he surely knows how to make the wonderful pasta we're known for worldwide.

      Even in Italy, outside of the popular regional shapes, most Italians have not heard or know about 80% of the shapes made in their country. A lot have even gone 'extinct'. The variations are vast.

    I never knew there were so many types of pasta. All I know are spaghetti pasta, macaroni pasta, twisty pasta, butterfly (bow tie) pasta, shell pasta and ravioli.

      True, because every shape carries the sauce differently and changes the taste experience. One of my favorites is 'gigli', because it holds a thick sauce so well.

    HOW DID THIS VIDEO BRING ME TO TEARS! My family used to drape the noodles over the kitchen chairs, I miss the old traditions of pasta making. My grandpa owned a farm, he grew a lot of the ingredients they used, particularly the meat, while my grandma and aunties would make the sauces and pasta and my uncle would make sausages. Those are the kinds of things you teach and not write down in a recipe book. When my grandpa passed away, cooking in that way, of relying on one another and collaborating on a big Sunday meal, stopped. That's how much this video means to me. Thank you for making it.
