      where do you shop ? 2 lbs of ham steak $8. quart of chicken broth $3. all the veggies $6. This would cost $20 to make.

    Towards the end of the soup being ready, look into adding dumplings. Depending on if you can get eggs cheap, adding dumplings to the soup like this can not only make a great addition, but stretch the recipe. For a large pot, about double what you made, mix 4 eggs, 3/4 cup a milk, tsp of salt and tsp of garlic. Sorry for this next part, add enough flour until it looks right... The batter should be a bit thicker than pancake batter. Either way it will cook and extend the soup. It's going to be good either way, just need to play with what your family likes texture and looks wise. Drop tsp or tbl spoon amounts of the mix at a time into the soup. Don't overdo it. See how much they grow and how much juice you want. Cook for about 10 minutes. This is one you must play around with. Sorry, grew up very poor and this brought back that memory. Hope this helps!

    I made delicious tuna patties last night.
    Drain a can of tuna, crush about 10 Saltines to powder, add a squeeze of lemon, and whatever else to season, then fry in a bit of oil. I put mine on a bed of lettuce, lined with balsamic vinegar, added tangerines and cherry tomatoes on the side 😊👍🏼

      @@MichaelTheophilus906 There are always cheap alternatives to any recipe. I use them all the time. In this case, you can go to the dollar store and get a cheap bottle of Italian dressing and a can of Mandarin orange slices (or sliced peaches or whatever kind of fruit you like). The resulting meal will be essentially the same as what the commenter suggested.

If you are truly struggling to get food, I'm sure you know that food banks are open to virtually everyone, plus the federal SNAP/EBT program is very generous. Otherwise, I guess you just want to grouse, and I'm not available to listen.

    Hey Wolfepit, just a thought: My mother used to help in poor places where not only food was scarce, but also fuel. I know that this is a channel primarily for viewers that don't have to worry if you have gas at all, but these recipes that are quicker really do make a difference for people in even more precarious positions, who can't even afford to have a shank cut in the oven for 3+ hours. Thank you for this.

      I mean we really have to do some extra thinking at that point, because what they’re using for heat _radically_ changes the equation for this. With electric or gas, quicker is better for fuel usage and cost but savings from using it intelligently can save more in food costs than you’re spending for fuel. But with fire or solid fuels, it becomes way more complex; worth mentioning or making videos about though. You have some easy savings, like using a kettle to boil water and not boiling pasta outright in water (a massive energy savings), and then can actually explain the intricacies of cooking with a fire.
      Although in the same vein of thinking as you, perhaps also minimizing the use of water is also something we can look at, given there are places where it’s an issue.

      This is why I buy a case of water each week during Hurricane Season in Texas, but also Sterno cans for the winter, along with naphtha canisters. It's not a bad idea to have a basic camp stove on the ready, especially for indoor cooking, while your freezer stock is outside in an insulated cooler when power is gone. Also, learn how to lay a fire, as that can be rather important. And that water you stocked up last season will sit you well when the power is out, and boil notices are about. Know where you live, and plan for it.

      One way around this is to get a slow cooker for those cheaper cuts of meat like shank. Sure, you have to buy the slow cooker, but a basic one costs about 20 to 30 bucks and it will pay for itself in no time at all. You can quarter the cost of cooking on an ordinary gas or electric stove by using a slow cooker. .

    When the soup pot is just about empty boil some dry noodles and stick them and a can of spinach in the pot. I always tell hubby to eat all the tater's out of what I make first, (they don't freeze well). I save the broth stick it in the freezer and the next week I pull it out and add different stuff to it. Keeps the old coot from getting bored.

    Another great thickener is instant potatoes flakes.
    Instead of ham it's also good with smoked sausage or kid friendly hot dogs.

      I was trying to think what my mom used to replaced the ham with, I don't like cubed ham in potato or pea soup and I've had this with hotdogs before and it was good, might be cheaper than the ham steak too.

    I just made the easiest potato soup last night. In a pot I put in about 5 medium diced potatoes (6 cups ish) i didnt even bother peeling them) Then I added 6 cups of chicken broth (Well actually 6 cups of water and about a walnut size portion of Better Than Bouillon Roasted Chicken) Let it cooked until the potatoes were done, added a 8 oz brick of cream cheese. Let it melt. Put about 2/3 or 3/4 in the blender and blended until smooth. Added 4 slices of diced bacon and it was soooo good. Could be garnished with chives, cheddar cheese, bacon bits, or just all of the above.

      Since the price of milk went up I buy the off brand cream cheese and use it as a replacement for milk products. However, the price of cream cheese has gone up now to. I have some left in the freezer but, after that's gone there just won't be anymore.

      @@MichaelTheophilus906 Hi Michael 👋 if you can't afford cream cheese you can use milk or water. You don't have to have cream cheese, or any cheese at all, to make a tasty potato soup. If you can invest in a jar of bouillion cubes you can use them for many different meals in place of cans of chicken broth. They also have a higher sodium content so you won't need as much salt, too. If you are able to buy a small bag of shredded cheddar cheese it makes a good garnish for the soup. If you can't afford it don't worry. Your soup will still be good. Best wishes 😊

    Looks great! Another alternative to the added milk or cream is an 8 oz block of cream cheese...cut into cubes to facilitate melting.

    I don't comment on videos, even though I watch a ton of them. But I just wanted say... THANK YOU! I love cooking. And my situation changed now, but it was very sad when I would see recipes back in the day and know I can't afford saffron or truffles or whatever. Your videos saved my butt many times when I was in a crunch. So yeah, thank you so very much - I don't know if you get enough encouragement about this series because it's not "sexy". But please know that you've helped at least one family tremendously

    I also am a big fan of soups and stews. In fact, I keep a 2 qt. slow cooker full of them going 24 hours a day almost year-round. They are delicious, inexpensive and instantly gratifying whether for a meal or a snack. Right now I have a creamy potato-mushroom-butter bean-bacon combo going that's insanely good. Next up is lentil with vegetables. Then an Asian-style noodle soup with a lemongrass-ginger-basil-bone broth.

    Made 1/2 recipe for hubs & I for dinner with store brand honey butter crescent rolls on the side. Had a 2 lb smoked ham in the fridge so I cut off the rind & used about 10 oz cut into really tiny pieces to get ham in every bite. Only other thing I did different was use instant potato flakes to thicken b/c I had a small amount that needed to be used up, added a bay leaf to the broth while simmering. Topped with some shredded cheddar and bacon bits. It was EXCELLENT. Thank you! Love your struggle meal recipes.

    I'd be very tempted to bump up the price $2.50 or so and add in an 8 oz package of a good melting cheese towards the end of the cooking, instead of the heavy cream or half-and-half. I'm not sure whether Swiss would work real well with this recipe, but it's low-sodium and a great melting cheese. Monterey Jack is another one that might work well, if you don't mind the extra sodium. Love your struggle recipes! Please keep 'em coming, man!

    Mr. Wolfe...you have hit home. I live by myself and making a huge pot (fill in the blank) that I can not only eat for dinner, but it goes into the fridge for seconds and thirds.     Back in the days when I could still stomach milk products, I would use a package of cream cheese at the end rather than milk or cream. It really added a wonderful richness to it.

    I like winter.
    It brings out the primal survivalist in me.
    The food is the best part though. Hearty stews, baked goods, spiced and warm aromas.
    My favorite time of the year. I don't even mind the snow as long as it isn't yukon blizzard weather.

    Hey! Love your channel, love the concept! Thank you! A couple of thoughts:
    I always start with the onions alone, and let them caramelize, to one degree or another, before adding anything else. For a cream dish, or chicken or vegetable dish, a light caramelization works well. For a beef or pork dish, or for a darker sauce or gravy, I go for a darker color. I find that this gives a much deeper, richer flavor profile to the dish.
    Second, I only add the garlic right before I add my liquid components. I make a small area among the onions, and whatever other vegetables I'm using, put a small amount of additional oil or butter on the pan, and add my minced garlic. Then I only let it cook until I smell it, i.e., the oils are released or it "blooms". Then I add in my liquids, like stock, tomato, beer, etc. This allows the garlic to provide optimum flavor, without risking burning it.
    Third, I always start with a roux, and toast my flour to the desired color for the dish I'm making. As I'm sure you know, flour will only thicken well if the gluten chains are broken; otherwise, it lumps up. So I always put my flour in at the beginning.
    For this soup, I would lightly caramelize my onions, then add the carrot and celery and cook til they soften. Next I would add another pat of butter on the bare pan and add my garlic. Once it blooms, I would add my stock. I would brown the ham in a separate pan before adding it. Again, the browning adds a deeper, richer flavor to the dish. I happen to love Yukon Gold potatoes, so I'd probably use them here.
    Anyway, from one budget-conscious cook to another, thanks for the work you do, and for the care you show "we the people". My soul is soothed just watching the making of this soup! Can't wait to make some!
    PS: As an additional aspect, I think using all canned goods for this recipe would be an interesting recipe for using an emergency food pantry: canned carrots and peas, cream of celery, and potatoes, canned ham, and granuated garlic, dehydrated onions, etc.

    I talked to the cook at The Pondarosa once about their clam chowder recipe, I love it. Clam chowder is pretty much potato soup without clams. Anyway, he told me he whist in about a half a cup of coffee creamer. I tried it and man it sure enriches the soup. Thanks and God bless you and your family.

      From someone who lives less than 40 minutes from the remains of the ponderosa theme park, specifically located in the area the show bonanza represented: No! no! NO! High mountain desert. There are no clams. There is no clam chowder.
      You literally couldn't pick a worse place to ask about a clam chowder recipe, and given the answer, you got what you deserve.
      Oh, if you want another tip, throw a brick of textured vegetable protein in there.

    Reminds me a bit of a ham chowder I improvised a while back, 2/3 of a canned ham (could have been the whole thing if I hadn't used some for breakfast), some cubed hash brown potatoes (frozen), some frozen veggies, and a can of coconut milk for the base, the coconut milk might seem like a weird choice but it had a long shelf life and was thick enough not to need any flour or corn starch. Just browned the ham and potatoes in the pot, added the veggies for a minute or two, then added the milk. Turned out pretty good.

    I made this today, I don't have butter so I used oil. I had no milk, so had it without. I did put in a bay leaf because I had one, and I used chicken base. I had some leftover sliced ham in the freezer. This was really delicious and creamy just like it had butter and milk in it. I served it with the $1 loaf of bread from Superstore. The kids loved it.

    This looks so delicious! I'll be trying it soon. I recently made an ultra cheap soup last week. I save chicken bones & veg scraps in the freezer. I had about 3kg of bones, and scraps, I made myself chicken bone broth with them. Added in some soup veg and then some noodles. The entire 5L pot cost me just €2.60 a d lasted an entire week in the fridge. Your chanel gives me a lot of inspiration

    I make potato soup with ham quite often, but yours looks MUCH better! I can't say yours is cheaper because I didn't add all the extra veg or butter, I just added a little milk at the end. I definitely prefer yours! I haven't cooked yours yet, but I do have imagination and practice cooking. I could easily add the onion and carrot, but I'm not sure I can buy frozen chopped celery. Using something other than a ham-hock also looks good. I could save that for lentil soup and save more money in the long run in my specific situation. NOT claiming it's good for anyone else, just me.

      @@lindabarrett6471 The first "potato soup" I ate was at my grandad's house, so my stepgrandma? made it. I thought it was good because I was maybe 4 at the time. It was just potatoes in hot water with a little salt and pepper. I have evolved since then. My mom NEVER made potato soup, I don't know why when it is so cheap and filling... Anyway, I developed my own, which had milk added in the last 10 or so minutes of cooking. It also contains bacon or ham hocks, depending what I have on hand. I do add onion and garlic but not always at the same times or sizes or whatever.

    Very similar to what I make here in the UK, i use big n chunky veg, 2 packs of cooking bacon (cheap bacon off cuts) 2x 500g packs, 2kg potatoes cut chunkly, 500g chunky cut carrots and an large onion diced also 1 large leek cut thinly with 2 chicken stock cubes into 3 pints water 1 teaspoon mustard, 1 teaspoon tomatoe puree , 1 heaped teaspoon mixed dried herbs ,then stew for an hou over a low heat, then add 150g red lentils and let that simmer another 25 minutes , the lentils dissolve to nothing and thicken the soup, then add white pepper to taste,, though it rarely needs salt due to the bacon. Feed a family of 4 a couple of large portions each or a larger family for around £4, around 50p a serving just add some crusty bread and butter and it's the ultimate winter comfort food.

    For those of us who live in the Midwest, deer carrots are $3-5/40lb, versus $1.79/lb for buying carrots in the store. Slice and freeze 'em, or shred and dehydrate, then vacuum seal. Goes great in sauces or soups like split pea.

    Don't hesitate to fry some of the potatoes until moderately brown first. You don't need to brown them all, just enough to get some fried potato taste in there. Some thinly sliced green onions added five minutes before the end wouldn't go amiss either. All in all, good work!

    I would suggest waiting for good sales on the ingredients (f.ex., the supermarket has sacks of potatoes on sale or a "Manager's Special" on some meat, or the dollar store has bags of frozen "mashed potatoes" (chunks of potato to be cooked and mashed with a little liquid) on clearance). I would also probably make soup mostly in either a slow cooker (basic models are pretty cheap at the dollar store or the thrift shop) or an electric pressure cooker. I'm always up for a hearty bowl of soup, though!

    "Hold off until the end before adding salt." That is excellent advice when using commercial broth and a salty protein like ham. I've made the mistake of adding salt at the start as if I were using plain water and something like unseasoned chicken when making this type of soup/stew. Which invariably makes the result too salty.

    I make something similar to this, if you don't have milk you can use powdered milk. If you have an extra packet of Mac and cheese powder the cheese powder is also good in this
